Curry help!

Hi all, if anyone has any pointer on this question im open to any sujestions as i cant work it out!

I have made the Zaal curry bass and have followed alot of different recipes on this site and somehow they all taste the same... Only difference to my curries is some are hotter than others depending on what the recipes requires, i follow everything step by step but im tired of eating the same tasting curry with a different heat level everytime!

Any pointer?

How does your base taste? Should be quite mild but I'm wondering if you have over spiced it and thus the flavour from the base dominates whatever spicing you add to each dish?

What recipes are you making? If you're using the same base and the same mix powder then there's likely to be similarities.

If I'm cooking for a few friends, I like to choose things that look different and taste different. i.e a madras/ vindaloo/ jalfrezi plus a Ceylon/ Patia plus a dansak.

I've seen plenty of takeaway food where it was difficuly to work out which dishes were which.

All good advice ;)

If you cook a Plain Chicken Curry and then a Chicken Dupiaza
The difference is really only the Onion in the Dupiaza
Then if you cook a Chicken Tikka Chilli Masala, its a much more complex curry
and nothing like the Plain Chicken Curry taste.

A neutral base is the blank canvas.
Just keep experimenting with recipes and flavours.
