Oddly enough I have just today ordered a four-pound McSweeen's haggis from a butcher in Wadebridge (Cornwall).

BIR supplies

More Shan packets to trial out. £0.99 each. The Karachi Beef contains dried plums (with pits). OK. The shop also had Laziza Lahori Charga, but well over twice the price of Shan.

Arrived yesterday. Just got the side plates for now, to look them over. Matte green. First impression, rather nice. Will get a full set. Glossy curry on matte. Good idea?

Paneer press gadget. The colour matches nicely with my kitchen knives and base gravy containers.

BIR supplies

The green raisins (out of date) were 20 p. These are for a walnut paneer sandwich filling. The other things are for biryani. No luck sourcing some nice clay pots yet though. A local shop does them, but everyone they had was badly chipped, really not-fit-for-sale badly chipped. Saw some that would be ideal on Amazon, but just shy of 60 quid, each.

The pistachios were expensive, but will probably work out cheaper in the end. When taking the shells off I just eat then straight away. Can't help it.

A video for making rice with Daawat extra long basmati. Pretty standard partial absorption method, including the lemon juice reference. My go to. I start with coating the rice with oil. From where I got the method from (quite likely on here) it said that if some of the rice browns at this stage, it adds a nutty flavour. I don't let it brown. Also, when draining at the end, I rinse the rice in cold water. This is how some of the BIR TAs do it. Portioned into the plastic TA containers. Then kept in the chiller and microwaved for each order, as needed.

Anyway, an excellent video, imo. Also, the simple (beautiful) presentation of the rice by Steven, with just fried onion, looks absolutely stunning.

Tandoor Master naan cushion (10"). Just got the cover and stuffed it myself. Needs a bit more stuffing.
