I'm thinking of having a crack at bombay aloo and have found a couple of good recipes on the site!
Are potatoes typically parboiled whole are are they diced first?

Original recipes will tell you to boil them in the skins, then cut them into chunks and add to sauce, Me, I cube them first, don't take so long to cook
. So which ever way you go, is fine.
Just don't overcook them

Afterthought, Try and use waxy potatoes if you can, floury ones tend to break up if cooked in the sauce too long

Then go for it young-in, Best of luck, and enjoy,
Try a bit of your spice mix in there as well
