Masala Sauce Tastes Awful In A Curry!

I've successfully made madras curries and kormas and they are am amazing but when ever I try to make chicken tikka masala or put some masala sauce in a dish it tasted absolutely disgusting a taste which I can't describe apart from awful.

I cook the masala sauce in the dish for the correct time but it still tastes bad.

I've tried 2 different masala sauces

Masala Sauce 1 - CBM Red Masala Sauce.wmv

Masala Sauce 2 - Tikka Masala Sauce Recipe(Part 1).


What am I doing wrong as I know my local t/a uses masala sauce in some dishes and it tastes amazing.

Any help to what I'm doing wrong?

I can vouch for this recipe - made to spec it gives a really good CTM with a good flavour of coconut which I like.

Hi ramsded, Julians version on it's own won't complete a tikka masala as it has no sweetner. It's a more versatile paste, which I add to all kinds of savoury dishes. Coconut etc would be added on it's own to complete the dish. How much are you adding?

I don't make tikka masala, but use chewytikka's masala recipe below:

4 tbsp Yoghurt
1 tsp three Pataks Pastes
Tandoori, Tikka and Kashmiri
1 tsp Mixed Powder
1 tsp G&G paste
1 tbsp Mustard Oil
1 tbsp Vegetable Oil
1 tsp Red food colour (Natural Cochineal)

I add it to all kinds of dishes. It works a treat when everything else is cooked properly & in balance. Julians is very similar

The two that you have used are very different in that my videoed one is a cooked sauce and C2G is an uncooked sauce.
I think a lot of places use the C2G method or similar as it is a easy version to make.

I assume you have already scaled the cooked method down for home use?
How much of that did you use when making the curry? ie the addition of base, coconut,almonds, cream etc

I can only tell you that if done correctly then this is a long way from 'absolutely disgusting, awful' ;)

I've made your CTM Mick and it is spot on. the kids can't get enough of it.
