I spent an enjoyable Friday evening cooking this amazing base sauce and this evening cooking the Madras. Whenever I go for a BIR it has to be a Madras and this is as close as I have come to it so far. It was hotter than I have had at a BIR and the feeling has only just started to come back to my tongue

I like the way the chicken is cooked and will be cooking my chicken in this way from now on. I now have a freezer full of base sauce and a couple of portions of Madras. Just add beer for a perfect night in........... I would recommend this recipe as the only skill needed is the ability to read a recipe [its that straight forward] so give it a try.......
