Chicken Tikka Masala

This recipe was given to me by the wife of an Indian Chef, personally I think the chicken should be marinated for longer but give it a try she swears its the real thing.


Chicken Tikka Masala

Ingredients:-
? Onion, chopped coarsely
3 Tbsp tomato puree
1 Tsp spoon cumin seeds
1 Inch piece ginger root, chopped
3 Tbsp lemon juice
2 Garlic cloves crushed
2 Tsp chilli powder
1 ? Ib of boneless chicken
Salt & Pepper
Fresh mint sprigs to garnish

Masala Sauce:-
2 Tbsp ghee (oil)
1 Onion sliced
1 Tbsp black onion seeds
3 Garlic cloves crushed
2 Fresh green chillies chopped
7 oz Can of tomatoes
4oz/1/2 Cup natural yoghurt (or cream)
4 oz / ? Cup coconut milk
1 Tbsp chopped fresh coriander
1 Tbsp chopped fresh mint
2 Tbsp lemon or lime juice
? Tsp Garam masala

 Method:-

Puree the onions, tomato puree, cumin, ginger, lemon juice, garlic, chilli powder and salt & pepper in a blender, and transfer to a bowl.

Cut the chicken into 1? inch cubes stir into the bowl and leave to marinate for 2 hours.
Make the masala sauce. Heat the ghee (oil) in a large saucepan, add the onions and stir over a medium heat for 5 minutes, add the onion seeds, garlic and chillies and cook until fragrant.

Add the tomatoes, yoghurt and coconut milk, bring to the boil and simmer for 20 minutes.

Meanwhile divide the chicken evenly between 8 oiled skewers and cook under a preheated grill for 15 minutes, turning frequently.

Remove the chicken from the skewers and add to the sauce, stir in the fresh coriander, mint, lemon or lime juice, and garam masala. Serve garnished with mint sprigs.



Lamb Tikka Masala

Ingredients:-

1 Tbsp cumin seeds (ground)
? Tsp ground turmeric
2 Inch piece ginger root, grated
2 Garlic cloves crushed
? Tsp of salt
4 Floz / ? cup natural yoghurt
2 lbs boneless lamb, cut into cubes
1-2 drops of edible food colouring
1 Tsp of water to be mixed with the dye
Fresh mint to garnish

Masala Sauce:-

1 Tbsp Ghee (oil)
3 Tomatoes peeled & chopped
? Tsp of yellow mustard seeds
2 Fresh green chillies chopped
4Floz / ? cup coconut milk
3 Tbsp chopped fresh mint
3 Tbsp chopped fresh coriander
Salt

Hi All,
Once again we are back to the fact that you dont have to wait 20 minutes plus for a takeaway
ctm, however I must say that the ingredients sound interesting.
Tried a combination paste last night it was tasty had a little something about it, or was i just
hungry? The paste was made like this
1 tsp coriander
1 tsp cumin
1 tsp chile powder
1/2 tsp tandoori powder
1 tsp turmeric
a little water to make a stiff paste,
then the usual heat the oil, brown the garlic/ginger puree add the paste fry on high heat for
2 mins add ladle of curry gravy reduce, add 2 more ladles of curry gravy add tikka add blended
almonds stir for few minutes finish off topped with coriander and evaporated milk. steve e

I like the sound of this to make Tikka so I've made up a batch which is marinating now. I found the texture to be quite thick so I added 2 tbl oil and a little more lemon juice. I also added a tsp of mint sauce rather than using it as a garnish.

It smells excellent - hope it turns out OK.

I guess it's hoping for a bit much, but it's a pity you weren't told if this is just a domestic approach for cooking a low volume CTM which ends up with the BIR CTM taste.  Otherwise, starting with anything other than base sauce, simply doesn't LOOK plausible, even if it turns out to be fantastic.

I notice theres no yogurt in the chicken tikka marinade, I was told that they don't use yogurt for marinating chicken and was given a recipe by a chef.? I did try it and I think I used to much onion it was ok but you could taste the onion too much, as usual it was a bit of this bit of that style recipe so I don't think I posted it but will dig it out.

This Chicken Tikka was spot on Chas - haven't tried the gravy, but the chicken is superb. This will be my new method from now on.
