Aussie IR Lesson - Vegetable Navrattan Korma (Sweet Version)

And the other Korma from the lesson, Navrattan Korma.

Vegetable Navrattan Korma - (Sweet Version)
Ingredients:
- 2 tbsp oil
- 2.5 heaped tbsp Nut Gravy paste

- 125ml-250ml Water
- Pre-cooked Vegetables
- 1 tsp Sultanas
- 1 tbsp Sugar
- 2 tbsp Coconut Milk Powder
- 100ml Cream
- 0.25 tsp Salt
- 1 tbsp Coriander Leaves
Prep Work:
- Pre-cooked vegetables, approx two cups worth
Method:
1. Heat pan, when oil warm, add the Nut Gravy paste and mix/stir through
2. Add coconut milk powder and mix through
5. Pour in 125ml of water, add sugar & sultanas, mix well and bring to a simmer
6. Add the pre-cooked vegetables, simmer for 5 min or so
7. Add in the cream and mix through, returning to a simmer for two mins
8. Add salt
9. Remove from heat and add chopped coriander leaves
Notes:
- Depending upon what consistency you prefer, add more water if needed.

Here's my first attempt at taking pics during the cooking process, it's not as easy as it sounds and my angle's aren't the best either.
Pic 1 - Oil and Nut Gravy paste are in and being heated and merged together...
Pic 2 - Coconut milk powder has been added and mixed through, now the sultanas, sugar and salt...
Pic 3 - In go the pre-cooked veg after the water was added...
Pic 4 - On with the coriander after the cream was added and then onto the plate...

This Korma looks good Mark, going to give it a go,
But not expecting it to be right as I've not done one before, nothing ventured, nothing gained as Thea say,
A question if i may,
where did you get the recipe for the pre-cooked veggies, can't seem to find one.

Hi hotstuff09,
For precooked veg I do the following...
1 med potato, cut into 1 inch pieces
1 med carrot, sliced
1 zuchini, cut into thin rounds
5-6 broccoli stems & florets
0.25 red capsicum, cut into strips
0.25 cup frozen peas
0.25 med onion, finely chopped
1 tsp garlic paste
2 cloves
1 green cardamom
1 inch stick cassia bark
1 indian bay leaf
1 tsp mix powder
0.5 tsp salt
0.5 cup water
2 tbsp oil
1. Heat oil in pan
2. Add whole spices and fry till aromatic and sizzling
3. Add onion and cook till light brown
4. Add garlic paste and cook 1 min or so
5. Add mix powder and cook 30 sec or so
6. Add water & salt, cover till boiling
7. Add potatoes, reduce heat to low boil, cover, cook 3 min
8. Add carrots, cover, cook 5 min
9. Add brocoli, cover cook 3 min
10. Add zuchini and peas, cover & cook 3 min
11. Add capscicum, cook 2 min
12. Remove from heat, and remove veg from pot so they don't keep cooking
13. Remove any whole spices if you wish
Optional :
1. After frying the whole spices, add 1/2 tsp cumin seeds
2. Add a star anise instead of cardamom etc
This is enough for my wife and I for two meals along with a couple of other curries ie Channa Masala & Dum Aloo etc.
Hope that helps some, I adapted part of the Kushi pre-cooked veg process for what we like.

I know none of the Red Chilli and Oil brigade read this so I feel safe in saying that I made this last night and it was bloody good. I know, yes I'm a closet Korma guy. This is a nice accompaniment to a meal.
Mrs Livo asked after a couple of mouthfuls, "What's this vegetable Curry?". We usually eat a more tomato based one which is a variation of Nentara.
