Commercial Base Recipes?
« on: February 03, 2010, 05:57 PM »
Hi,

Reading through CA's post of changing tastes over the years (see beginners section), it got me wondering whether people on here use any commercially available bases (if available?). Although I enjoy making curry, sometimes it can be a real chore if I have no base sauce left so being able to buy pre-done would be good on some occassions.

Also, I CA mentions the use of pastes, which I have yet to see used in any recipes (although I am selective about curries I look at recipes for).

edit: i've order some Mr Huda's paste (which comes in 1kg amount which may suggest it is used in BIR). Anyway, will post results once it arrives.

Hey Jamescha, thanks for getting this and trying it out. It will be really interesting to hear your results! :D Mr Hudas' Chicken Bhuna. The recipe doesn't sound too good though - the mini base he specifies sounds a bit odd, but you never know. It also takes forever! It is very interesting that this paste is available in 1 kg tubs. Maybe it's used in pub type kitchens rather than BIRs. At this rate, BIRs would never get their curries out in time!

I've used some Mr Huda products myself. The Tikka and Kebab preparations in jars are pretty good. Probably better than Pataks but they are quite expensive.

I think they have less preservatives than Pataks but the downside is a six week lifespan after you've opened a jar.

I would be surprised if used by BIRS due to both cost and relative newness of the products.

Let us know how the bhuna goes. Good luck.

PS: Forgot to mention, the Mr Huda stuff does not replace a base sauce, it is more like a ready-made spice mix in paste form.

I have tried most of the Mr Huda selection when I first signed up on here made some awesome Jalfrezi's with the universal paste and tikka paste. The base recipe is simple and quick with hardly any spices due to the fact most are in the paste. The nice bit of oil you get inside the jar seems to me the best part of using these pastes. Try the mint sauce recipe the best I have ever made out of about 15 different recipes I have tried.
