Tandoori masala..
« on: October 06, 2009, 08:50 PM »
Hi every one, i made a simple home curry last night, i havent got any base sauce left so i just knocked a home style curry up, to the tarka i decided to use tandoori masala which i have never used before and it gave it a great taste, i used it alnog side cumin, corriander and chili.

I never see recipes using it in the main dish as a spice, is it used regular in main dishes as a main spice or is there a reason why it isnt.

Skaze,

if u are are referring to the powder (as opposed to the mariande) then yes i use a small amount (1/4 tsp) in my std madras. i only seem to use it in tomatoey curries though with CTM being only exception (effectively anything i use passata in).

i would not use in a jalfrezi or bhuna for example.
