Curry Cooking Virgin
« on: March 22, 2007, 01:26 PM »
Never cooked a curry before, bought myself a few ingredients and I'm going to give it a go tonight. Wish me luck! ;D

Ingredients:
Chicken (thigh & breast)
Tomatoes
Onions
Yoghurt
Garam Massala
Curry Leaves
Green Chillies
Chilli Powder
Turmeric
Cumin
Cinnamon
Garlic
Ginger

plus a few other odds and sods.

Any pointers would be gratefully recieved.

Looking forward to all the smells in my kitchen!

Hi,

Welcome to the site  ;)

Are you going to be making a restaurant style curry with a base sauce?

Hi Coultergeist,

Yep!  Welcome to cr0 and Good Luck in your curry cooking exploits!   8)

Quickly casting an eye over your ingredients, I suggest you also include:

  • ground coriander
  • fresh coriander
  • dried fenugreek leaves
  • a decent curry powder or paste
  • tomato paste

You'd then probably have the basis for a decent curry, but which recipe are you planning to use?  And, as CK says, which curry base?

To my mind, curry leaves, yoghurt, fresh or tinned tomatoes and cinnamon (particulalry) and green chillies (maybe) are minor ingredients and could easily be omitted for a a basic curry

Regards,

I wasn't going to follow a particular recipe exactly, but I guess the ingredients would lend themselves to a Rogan Josh of some description.

I have also got fresh and ground coriander, fenugreek (not the leaves though) and a shop bought curry powder - local Asian shop. Was going to also use cloves and some saffron I've got in the cupboard for an extra flavour...

Unsure about the paste thing - I don't have a belnder so will have to do everything by hand. Reading the recipes for pastes it suggests using a blender - is this really a necessity?

Hi Coultergeist,

Being your first curry, if you wish it to be a positive experience, I really do suggest that you start by:

Wow! Looks like I've got my work cut out there, let's hope it's worth it.

I've got a few books at home with various recipes, I'll make something based on the recipes here and in the books at home.

Thanks for the tips, hopefully this is my first of many!

I made a meal from a Jamie Oliver recipe which claimed to be a "curry" but I think that would be an infringement of the Trade Descriptions act! Ended up like a watery Thai soup - tasted lovely, but wasn't quite what I was hoping for!

I'll let you know how I get on.

Hey Coultergeist,

I think i made the same curry as you from JO's books...really really bad, had to throw it away.

I am not knocking Jamie Oliver, he is cool as :o, but his curry recipe is not upto scratch

Hi Coultergeist,

Returning your best wishes.
Yes you do have a job on, but you will soon get used to it. I have been producing poor curries for many a year and while it can get disheartening you still carry on, but from what I have seen on this site you will soon be enjoying good meals.

All the best.
