Nickywelsh I think they're just using the traditional dhungar method whereby you do indeed drop a hot coal into oil and let the resultant smoke cloud infuse into the (covered) dish. It's used to good effect in dhansak dishes usually.The oil istelf isn't used directly, at least not in the traditional method, but it can be infused with garlic, cardamom, cloves etc. before adding the coal somewhat like you describe. It's certainly worth a try if you haven't done it before.
