Midweek curries

I made 3 curries last night and some mushroom fried rice. First was a chicken pathia followed by a chicken madras and finally a chicken saag. I used fresh spinach and I have to say it was jolly tasty.

One thing I would say about any mushroom dish is not to use those tasteless button/closed cap mushrooms. Use the large flat open ones sliced up...so much more flavour.

I stayed in my wife's hotel last week and insisted on buying my own breakfast mushrooms for exactly that reason !  I am convinced that when we took the hotel over they were serving flavourful flat mushrooms at breakfast, and I commented favourably on it at the time, but she is equally convinced that the mushrooms are still sourced from the same supplier and "we take what we are given".  I am still working on her with a view to changing her policy this ..... !

She tells me that the standing order is for "mushrooms", and therefore we take whatever they send.  I am trying to convince her to place two separate orders, one for flat mushrooms (for breakfasts, with steak, etc) and one for button mushrooms (for coq au vin, etc).
