Hi just signed up. I have been trying to recreate restaurant standard curries for the past six months. I have a copy of Julian Voight and Mick Crawford's ebooks and they have been very useful. But would like to expand my knowledge and technique. Managed to bluff my way into a local restaurants kitchen a few weeks ago which was very interesting and then came accross a few websites like this one. Hoping to learn a few tricks, although to be honest sometimes I think the secret ingredient is not having to cook it yourself ! Looks like there is a LOT of information on this site - time to roll up the sleves and jump in.

And many would agree with you  :)  Welcome to the site Audioq.  Enjoy all the site has to offer.
Definitely worth continuing the bluff and blagging your way back into that kitchen though  ;)

The site is brill for conquering BIR.

No secret ingredient just layers of flavour - a jigsaw which needs most of the pieces to look right.

Best wishes your ebooks are a real good start.
