Chewy's Triple Madras



Last night I was round at Chewy Tikka's house for one of our curry fest's with him usually doing most of the cooking cos he's miles better than me. Anyway I took round a Mutton Masala I had made with a Nellara Mutton mix which my local indian shop had recommended and I hadn't seen before. I wasn't to taken with the resulting curry but the on the bone mutton was very nice. We then did (well Chewy did) 3 different Madras's with slight differences in the ingredients like the type of chilli powder, lemon and worcester sauce missing in one, different base in one of them and different tomato in one, few chopped chillis in one etc etc. The chilli powders were normal, ground dried birds eye and Kashmiri. So with 3 slightly different madras to try I have to say it was a photo finish with the ground birds eye one probably just edging it for me. Not a massive amount of difference between them and all very good. Obviously the lemon dressing and worcester sauce came through in the two that had them but I would have been happy with anyone of them served in a restaurant/TA.  Left over madras sauce tubbed and mixed together tonight on chips which was fantastic hence the Triple Madras. We also had vindaloo and a pathia with a couple of naans. Fantastic night.

 Can Imagine fantastic night - you very lucky person to live I guess close by.

I too love this kind of try out - I've realised it's essential to do to understand the dish makeup and hence refine better.

Have tried the lemon dressing in and out myself and adopted in. I also quite like the Worcester sauce now and then.

The fresh chillies are my current interest having adopted the squat fat green chilli and dropped the medium length green chilli (retained for base)

Can you give more details pics of the chillies used.

I havestarted using the red Kashmiri in vindaloo and thoughts on this too appreciated

I scoffed the Vindaloo with Chips too. Lush.

A Mutton Balti Saagwala for the next session.(better than the real thing)  ;D feel a song coming on ;D

Putting an old fashioned Garabi on the go later - Celery - ooooh R Missus!

Jerry, Nothing special, just normal green finger chillis, you get in the Asian stores,
except these were really fresh, as if they had just been picked, with green storks and rock hard.

Garp - Nope, tooo far out in the wild and woolies. ;D

Very nearly called it Chewy's Ultimate Ultimate Ultimate Madras but I didn't want to run into copyright issues with Madrasandy   ;D ;D ;D

It wasn't quite relish but it certainly was delish.  ;) What i would describe as ' I quite fancy something slutty tonight', (which would very very occasionally be kebab meat and chips with chip shop gravy  ::) ). You know its wrong but....................

Very nice. When I make Chewy's madras it turns out red.  Must be using too much chilli powder.  :D  I like it though and it's the best madras recipe on the site, imo.
