I love it!
« on: January 20, 2014, 01:55 PM »
I love curry, Im not a bad cook either- enthusiastic and heavy handed!  I'm Matt and a whilst I enjoy a BIR or two I spend a large amount of my free time running so I also like to watch what I am putting in my temple ;)

I have been using this site for a couple of weeks now, and I have been fairly successful with a few different curries and techniques which are totally new to me.  At the same time I have been scaling back the unhealthy stuff (boo!!) For example I am using Chewy's 1 hour pressure cooker (Im new too pressure cooking - why didnt I get one of these sooner?!!) base and I used 75ml of veg oil as opposed to the 150ml stated, and I also spent more time skimming. I know its not for everyone!

As I have now come to realise that it is possible to create BIR dishes i'm spending more time in the kitchen, this morning I have spent some time with an Airfryer that my missus brought before Christmas which I think is the dogs for anyone looking to be abit healthier. So this is what I did this morning;

Its the recipe from CA ... http://www.curry-recipes.co.uk/curry/index.php/topic,1820.0.html
Done totally to spec, they were really nice.  I think next time I might turn the temperature up abit as I gave them 10min on 160 and they were just abit too al dente in the middle.

Anyway tonight im cooking Chicken Jaipuri ... http://www.curry-recipes.co.uk/curry/index.php/topic,11591.0.html

With.. Aubergine chewy style.

Nice to have discovered this site.

Welcome Mattie.

Although I've never done any free running (and at 50, it's probably not going to happen now) it's nice to have a healthy perspective on BIR.

My missus had a notion for one of those air fryers - I managed to put her off - but those bhajis look the business. As you say, just a bit of tinkering to get the inside sorted. But isn't that what this game is all about? Mess around - try this - try that - until you get it how you like it.

Look forward to seeing your creations :)

Cheers Garp,

You know Its never too late!!

The Airfryer is really good, bit pricey @ ?130 for the large one (I wouldnt bother with the small one) I use it to cook things that I would normally use the oven for, in about half the time, so its hopefully paying for itself slowly.  I would recommend it highly, but it is a compromise on taste vs health.  Next time I do some chicken tikka its going in there instead - I will post some pictures of the result.

After tasting another bhaji I think ill make smaller 'balls' next time too, I got 7 out of the mixture, so maybe go for 9... it is about trail and error though like you say.

Garp, Well Ive been playing chef this afternoon and here are my tikka results from the airfryer... They are thighs that have been marinating for 24hrs.

The downside is that you can only do 6 - 7 thighs at a time.  They are really moist though

Those look absolutely stunning, Matt - really impressive.

Nice and crispy bits on the outside - nice and juicy on the inside.

Very, very good mate   :D
