Chicken Tikka Jaipuri Video Recipe

Following on from Richs' Chicken Jaipuri thread

Met a new chef the other day and asked how he cooked a Jaipuri these days.

The owner invited me into the kitchen to show me, I asked Chef Rana if it was OK
to do a video on my iPhone (No Problem, he said, first time ever)

Easy to follow recipe, as its an assembly of precooked ingredients, flash fried then brought together
with a thin Garabi.

I later found out that this sauce (minus the Tikka) is used as a bed for their flame grilled Bombay lamb chops dish.

So not quite the Jaipuri I remember from the 90's but very close, mind you Chef Rana wasn't cooking
BIR 20 years ago,he was a SinkMaster back then.

If I cook this at home, I'd switch out the ketchup for red masala sauce and add a couple fresh green chills.

Anyhoo, one to try for the New Year!

Great job there CT getting into the kitchen and filming an expert at work.  I could watch these chefs for hours.  I second the addition of chillis and the addition of some masala sauce instead of the ketchup, although it does work well if not overdone.

Great work Chewy - Just logged on and saw this post!! HAPPY NEW YEAR TO EVERYONE! already 0518am 1st Jan here.
The inclusion of the peppers is the norm as i posted but didnt use - the ketchup would bring the sour sweetness into the curry - and is used regularly by chefs around the world - why not as they say its a condiment already prepared - like pataks pastes etc etc.
What i do with my Jaipuri is the use of different spices - rather than the mixed spice - it just gives it a different flavour ( ie not the same as any other curry) also add the milk powder and cream etc for a more creamy curry.... I also use the dry mint - however a spoon of colmans mint would work equally well - mint and sour etc as in masala sauce depending on how you make it.

Chewy I LOVE THAT SAYING - money for old rope towards the end of the vid :)

Sorted, put a little extra oil in your base, when done, spoon oil into a jar, bingo seasoned oil

Or do the same but with the precooked chicken or veg once done and then nick it eh?  ;D ;D
