On Wednesday I took advantage of the Coxheath Tandoori's "Super Wednesday" offer to buy two starters, two main courses, two side dishes and two rice or naan for GBP 20-00, and with one exception all was excellent (and far far better value than the meal at Tudely referred to previously). The only weak spot in the order was the mushroom bhaji which looked the part but which failed to live up to its appearance, simply tasting bland. Whem I re-heated some of the meal for my dinner last night, I took the opportunity to try to correct the spicing of the mushroom bhaji, starting by frying some chat masala in a little molten ghee, then adding the mushroom bhaji, cooking for a few minutes, adding some hing and black salt, cooking for a couple of minutes more and then serving. What a difference ! This was now a mushroom bhaji /par excellence/ and has given me the confidence to essay one of my own : I shall start with the mildest of spicing, and then follow the same procedure as with the take-away, and have every confidence that the results will be worthwhile.
