Natco base
«

Hi all, made the natco base and madras last night, all though i found that it could do with more taste my wife absol loved it ;D
i made a few ammendments to the base, i added a green pepper, fresh coriander and fresh green chilli which improved from first time i made it
only trouble was i had a batch of the onion 'soapy' paste in the freezer, but when i came to use it last night i was shocked to see my wife had thrown it away!!!!!!!!!!!
On my first attempt at making the curry i added this onion paste to the curry and found that it did improve it, so it would have been interesting to add this last night
Any way i am making Darth's 100% madras clone next, my wife thinks its too hot, but i love em that hot
Any 1 else tried or experimented with Natco base?

Remember that you can always tone the recipe down a tad and then kick it up a notch for those that wish to " enlighten the taste buds " .

I really rate the natco grail base, I dont use the onion soap thing though just the base.
I have just finished using up all of my first batch of base and I can honestly say every curry I cooked from it was superb, way better than any other curry I have cooked, and smelt and tasted like it was from a BIR.
I wont be using any other base again (unless a new one pops up which Ill try once), it really is that good!
Next weekend I will be cooking my second lot of base, this will tell me if my first base was just a fluke.
I think the difference in this base is that the onions are fried (I sweated mine for at least 30 minutes covered) and the huge quanity of garlic (1.5 large bulbs for 7 individual portions)

I tried the Natco base before I found this site. I made the recipe twice & it was pretty much the same each time. At that time, it was definitely the best thing I'd made so far.
It still wasn't really like a BIR but very good just the same. I did Darth's 100% Madras last week for the first time & i think its better than the Natco. Natco seemed to be described as a base that someone has created by trial & error where many of the recipes here are based on personal experiences & kitchen experience aswell as a bit of experimentation.
Judging by my first cr0 cook up & am going to concentrate on these type of recipes for now.
Im not sure if my first Darth batch is exactly like a BIR but the I REALLY like the taste & i reckon further tries will be different & (hopefully) better.
I also used Darths base & cooked Bruce (Edwards) "pre cooked chicken" & then made Bruces Korma recipe, again although maybe not a BIR, the end result was still very good & I would cook it again.
I might take Mark J's advice & try other things with the Natco base. When I made it I went on & cooked all the base up into a madras/vindaloo, so it will be interesting to try this for myself................... ;D

I made a madras and jalfrezi(thomashenry, any 1 got jalfrezi recipe) using natco base last night. I wasnt too impressed with madras(even though my wife and stepson absol loved it) jalfrezi was ok, def try it again, but had few disasters making it!!!!!!!!!
Any 1 else tried it. You have to heat your pan untill really hot and smokin and then quickly fry ingredients, i did this but as soon as added garlic puree it burn't instantly, burning all the pan, spitting oil all over me! Tried it again but had to use fresh chopped garlic at a lower heat, but still it browned too much, but the result curry definately had a taste i'm looking for, even if it did have a burnt taste to it.
Has any 1 else made this curry, maybe my pan wasn't heavy enough, only used a cheap saucepan, prob been better in my wok.
In my natco base i didnt use correct amount of garlic/ginger(have no scales) just guessed, and i think that was missing taste in the madras and also didnt have any onion paste left, so couldn't add that at end, first time i made base and madras it tasted wonderful and pretty easy to make , shall def make another batch this week, and am going to make darth's 100% base to compare also, shall post results later on in week! ;D

Hi madrasandy,
You probably used fresh oil when you did this. No matter what technique you use, if you use fresh oil and high heat you will always instantly burn the G&G and/or spices, the oil temperature will just be too great. You have to use the orangey coloured oil scooped from the curry base. The cooking with the curry base changes its nature and you won't then burn your ingredients.
