I think I just burned my taz base due out of distraction

Alright, being confident in never having over-cooked/burnt the ingredients I left the pan on its own, with only a few checks here and there, I think this time I may have over-cooked them. There is a caramelised-dark paste stuck to the bottom of the pressure-cooker. Has anyone ever got parts of the base caramelised? I never noticed this before and I must be honest, I don't really like the smell all that much. It's bit like smoked toffee, without actually having smelt smoked toffee, but that's how I can best describe it.

I'm just wondering if it's worth the effort  to go ahead and blend it still

Not something I've experienced gagomes but having made it why not scoop a jug's worth off the top off the base and blend it to see what it tastes like - you may be able to salvage some/most of it?

I'd imagine I may have ruined that chance when I scooped/mixed it. What would you think?

If only I had peppers left, I would straight-away make another. Unfortunately I'm short of and it's unfortunately too late in the day (no 24 hours shops nearby either :-()

If it was actually stuck to the bottom you could have burned it.  Might as well finish it though and see how it turns out.  Not tried the Taz base yet. I aim to get the sludge when making c2go bases.  It tastes super sweet with a sort of sulphurish/vinegar aroma in the background.  Dead easy to burn it though, in a matter of minutes.  I think ideally the dark stuff should form off the bottom of the pressure cooker. I will try backing off the heat when I think it's nearly there next time.

Yeah. It was stuck to the bottom. I blended it, but... I just didn't like the smell or taste and as such I've not really done any food and threw it away. I'm remaking it tonight

Once it has started bubbling away I tend to turn the heat to as low as I can just to keep it on a simmer. This should avoid burning, and an occasional stir helps also. Let us know how you get on this evening.

Thanks ! I've just put it on and I have kept the flame low enough to just simmer ;-)

If I were to guess, the burning only happen in the last 20 mins after throwing the tomatos in, but it's just me guessing anyway :)

So, you are using 2kg instead of 1kg of onions, do you scaled any other ingredient up?

gagomes - yes all other ingredients are double quantities - veg, spices, liquids etc. - should get 14-16 generous portions of base out of this.

Gagomes I have done this but not with a pressure cooker.





"Today I started to cook the 3L Bangladeshi base gravie from Julian?s ebook.

To my horror and after two and half hours cooking there was a brown residue stuck to the bottom of the pan. I thought this could be the burnt ginger and garlic paste but the other ingredients were not stuck to the bottom of the pan and with a bit of effort managed to get the residue off. 

The curry was darker than normal but I have been using a darker onion bhaji oil. I was going to throw it away but decided to put the tomato in and give it a wiz and taste it and then make my mind up.

I was thinking that it would taste bitter but it does not at all and does not taste burnt and I would say it tastes better than the ones I did before which was about 3 x 1.5L and one 750ml

Have you guys ever had this and if so what would you do as it's cost me 6 onions costing ?2 and other ingredients?"
