Just been looking back over previous threads going back to 2008 and there seemed much more excitement in the 'Quest' for BIR perfection than has been over the last few month's.
Personally I think I am 'Cruising' now being able to match all but one of the T/A's we use but although my Madras Curries are more flavoursome than theirs their Curries tend to be lighter in texture and a more pleasing to the eye 'Orangey' colour comrared to my 'Orangey/Brown' colour, I think I could be over Spicing though plus having Paprika in the Spice Mix.
Made a batch of Base yesterday (Rajver) plus my usual three portions of Madras and today my Mother in Law who lives two doors away said She heard the neighbours next door and the ones some fifty yards away who were in their Garden making the most of a lovely evening say " What a bloody stink of Curry !!

" " Must be the Indian over the back " Our closest Indian which is 100yds further on got the blame ;D
I will continue with my BIR style Curries but I would like to concentrate more on the 'from scratch' Curries which I used to struggle with especially the cooking down of the Onions but other than blending as in the 'Tasty Curry from Scratch' recipe I have finally found out how to chop Onions so fine that they cook down in minutes and this alone has rekindled my interest in 'from scratch' Curries ( thanks to the Chef at the Myristica Restaurant in Bristol where I had a second cooking lesson recently)
I will be keeping a close eye on the Forum as usual in case of any breakthroughs though
