Lets Talk Curry / Re: Scaling up advise please

I think most feel it's much better to do it in multiples of two. Double the quantities of everything to get a double portion. Do this twice for 4, 3 times for 6, etc.

I think going any larger than a double portion, doesn't work proportionally, and won't get as good results. You won't get enough heat from a home cooker to cook things properly/BIR method for large portions.

That's what I do, anway.  :)

Ooooh! Do like the look of that! And probably (reasonably!) healthy.

Hey Gav - that chilli paneer looks soooo good! Have to have a go at that! Never made paneer before, looks quite easy, and never knew it only took 30 mins. Looks to be some really good recipes on that vegrecipesofindia site.

Edwin - does the paneer absorb much flavour?

One thing I would have liked to have tried properly but I have electric hobs.  :'(

I made some in the oven once, but wasn't very happy with them, so never tried again!

Lets Talk Curry / Re: A visit to a Restaurant

Soooo.......how did they compare with your home made curries? How close are you to a good restaurant meal percentage wise?

And did they offer you a job? An insider would be great....  :)

I do love a dansak. In fact I love lentils. Now I feel hungry. I am definitely in the "add a bit of pineapple" club. Just adds a little something different. :-)

Curry Videos / Re: Curry club1 chicken Kurma.
February 04, 2016, 10:07 PM
So was that korma finished in less than 3 mins, or was there still cooking going on after the video ended? Surely not done in 3 mins, chicken was in less than 2 mins or so!

I wonder if these chefs get stressed on a friday/Saturday night, or do they take it all in their stride? Must be aliens.....

Pictures of Your Curries / Re: Saturday Curry Night

Guests were impressed CH! "Better than going the restaurant", they said! Not quite sure that's correct, but I'll  take it!

CT, be interesting to compare 2 home made curries using electric and gas. I think people would be hard pressed to tell the difference, however gas is definitely more controllable, and would make cooking curries easier. Now if I could have one of those 200kw gas cookers from a BIR, I'm sure I'd notice the difference!  ;D
