Karai Chicken Lahori

2 Chicken breasts
2 tsp garlic ginger paste
Generous pinch salt
1 med onion finely sliced
1 large clove garlic sliced
2 cm Ginger sliced
3 large tomatoes quartered
2 tsp chilli powder
1/2 tsp of each-
    Turmeric
    Cumin powder
    Cumin seeds
    Coriander powder
    Garam masala
    Methi
5 green finger chillies sliced lengthways
3 Tbs veg oil

Chop breasts into equal chunks and add garlic/ginger paste and salt, cover and leave for 30 minutes
Heat oil
Add onion garlic and ginger
Fry till onions soften
Add all spices and cook out for 1-2 minutes
Add a little water and stir
Add tomatoes and fry till soft, adding a little water at a time to stop it drying out
Add chicken, stir well and cook until chicken is tender (15-20mins)
Taste and add more salt if needed
Heat a little oil in a frying pan and add finger chillies, fry fir a minute then poor over the cooked curry

This weeks Friday night curry was Westys Madras that was recently posted.
Pretty similar to my own Madras with the addition of curry powder and tandoori powder.
Also I used pre-cooked chicken
Have to say it was very tasty, a lovely take on the Madras.

After a bit of reading up, searching recipes I had a crack at a Phaal.
Not wanting to go down the excessive chilli powder route I blitzed a load of finger chillies and some green nagas
The heat was spot on and far better than chilli powder heat

Traditional style madras with no base gravy, definitely more flavoursome with more individual tastes and really packed a good chilli hit, but I think I still prefer a base gravy madras for a more rounded overall taste. That said I'll be making this one again for sure.

Curry Base Chat / Pressure Cooker Base

I have just bought a relatively cheap electric pressure cooker from fleabay, my first ever pressure cooker! :D

My main purpose was for base gravies, but I am discovering so much more that can be done in a pressure cooker after Gav kindly sent me some cookery books.

Anyway last night it served its purpose which I bought it for as I made Chewy's version and I have to say it was very good indeed, so easy and quick, I can't believe I have never used/owned one before !!

Friday curry inspired by recent posts

Garlic Chilli cooked with extra extra hot chilli powder
Chicken Tikka as per recipe
H4ppy Naan with fresh finger chilli and garlic

Have to say that it was one of my most enjoyable curries of recent weeks, the chicken tikka was perfectly spiced and did not overpower the curry.

Wasn't sure if I was going to grow any chillies this year, but decided to sow a few (greatly reduced amount) seeds anyway.
Not doing too bad so far.
Various Naga, Morugu, BOC, BYC, Indian Cayenne, Thai Dragon, and 2 of my own crosses which are F2 this year.

Blades Chicken Tikka, served on pitta bread with onion salad, garlic yoghurt and my own Tomhurto Ketchup

Not sure where this recipe originated but its the one I always use for chilli fried rice

2 Tbs Veg oil
1 ts G/G paste
1/2 Small onion thinly sliced
3 Green finger chillies sliced
1/2 ts Salt
1 ts Mix Powder
1 ts Methi
1 Portion Pilau Rice (heat before adding)

Heat pan then add oil
Add g/g fry 30 seconds
Add onions fry 1 minute
Add chillies salt and methi fry gently till onions have slightly softened
Add mix powder and cook out spices
Add pre-heated rice and stir through
