I added some of the universal curry paste to one I was making for my friends hubby, he doesn't like it too hot. I used the B. E base. He said it was exactly like our local take away, of course now he expects a cuury every time I see him (I'm taking my friend on a trip to the spice shop next week!)

If it's the 'Diva' in Playa Flamenca, Costa Blanca, I've been a few times. I lived over there for 6 yrs, and at first there was only about 2 Indian restaurants :'( in the next couple of years it seemed hundreds opened but the Diva was the best (though still not as good as my locals!) I gave up going to any of them eventually and started to make my own as the 'taste' just wasn't there.
 Think I'm just about there now(with the help of the recipes on this forum) Still prefer the taste of 'South Shields' curry ;D wish I knew thier secret ingredient! We have hundreds of restaurants in one street and they're fab!

HOORAH! At last I've made Pilau rice that hasn't stuck together! Thanks for the step by step instructions. Think I was lacking in patience too. The rice came out fab! Husband was really impressed, and with the curry using a base from this forum. Better be careful or we'll end up having to go for Italian's instead of Indian's :-\

I lived in Spain for 6 yrs till a few months ago, have you tried one of the (many) English supermarkets. I used to get Pataks pastes from them. I lived near Alicante too (Crevillente) Must admit, it's great to be able to pop to the local Indian spice shop! :)

I had a great day in the kitchen and after making the base, messed about with different ingredients.I usually add various pastes ie Patak's vindaloo etc. I ended up with a good vindaloo, a plain curry (for a friend who doesn't do heat ::)) and a Ceylon type chicken curry. The rest of the base is in the freezer, which is groaning under the strain.
Not sure if they're up to my local take away standard, but the house smells the same! ;D

Hi
Joined a few days ago and been trawling through all the fab recipes. Had a trip to the local Spice shop this morning, (wow, I LOVE that shop) and am in the process of making Bruce Edwards curry base, just waiting for it to cool before blitzing..........maybe I'm sad....but I'm sooo excited ;D
