November 30, 2007, 11:40 PMQuote from: Cory Ander on November 29, 2007, 11:41 PMBut Secret Santa says "You can't mix and match" How much chilli do I "chuck" in ? and above all which spices do I also add?, and of what quantity? I'm lost here as there is such a differing of opinion. Is there a chef who actually cooks in an Indian restaurant here who can give a difinitive answer as to which direction I should pursue?
Hi CurryGal and welcome to cr0
I suggest you try one of the following, as a starting point, as they have all been used extensively and have had good reviews:
- Infinforu's "good curry base" - https://curry-recipes.co.uk/curry/index.php?topic=923.msg8159#msg8159
- Dathphall's - https://curry-recipes.co.uk/curry/index.php?topic=1808.0
- Stew's (Admin's) "New Base Sauce Recipe" - https://curry-recipes.co.uk/curry/index.php?topic=1894.msg16359#msg16359
Hope this helps! Please let us know how you get on
Oh, and I tend to have a different opinion than many others have, it seems, about mixing and matching curry bases and main recipes.
I believe you can quite satisfactorily mix them, provided that the curry base is lightly spiced, such as those above (and most decent BIR curry bases) are.
If you chuck loads of spices (e.g. chilli powder) into the curry base, you obviously need to chuck less into the main recipe.
Maybe a topic for another post!
We can't wait to get started cooking. However, thank you for your input and help. currygall.

I'm not sure where to start out of 40 bases (above) which one do I use? The members poll seemed to be a bit of a damp squib with no winner it appears. Do restaurants use so many different pots of the stuff? Is there 1 base/gravy on this site in which everyone uses and has succesfully re-created all curries which are on offer in our favourite Indian Restaurant. I am keen to get started but I am confused as to where to start to attain my goal.
Sorry to be such a pain, but I want to get things right from the start.

I hope this is it jethro I've spent ages looking for "start new topic" only to discover "new topic" is what you must have meant. Are you just finding your way around the site also? One more thing, why click on New Topic on replying to same topic?
Thank you Jethro for your invaluable help.

Hi All.
Sorry to jump in on this quote but I am unsure as to how to post on this site. I mainly cook for dinner parties and thought I would try something new. When we do eat out we occasionally 'eat Indian' so I will be trying out something from the menu. I hope to inform all of my progress. I hope my alias is not to presumptuous. currygall
