my impression of balti, as someone who isn't too bothered by having one is:

1. It's a curry made in a wok.
2. It's quite saucy.
3. It's eaten with a naan (see 2).
4. Everything else is marketing.

Bob, thank you so much for posting your mum's curry recipe. It brings back fond childhood memories of comfort food.

As to which curry powder, the equivalent today would be the absolute cheapest, bottom shelf, expired 2 years ago, bought from the corner shop where the blend has been exposed to direct sunlight all this time.

going to buy primals and cut them down myself. Grind trimmings for ground meat. Try to buy bulk as much as possible to avoid stupid grocery store prices.

Sorry to learn that, BHC.  For my part, a combination of advancing years, two sub-acute spinal fractures and recent open-heart surgery (replacement of aortic valve) have certainly diminished my interest in "mess[ing] around with food", but this is also accompanied by a significant loss in appetite so a single T/A curry (e.g., chicken Madras, pulao rice, saag aloo) will easily last me three days !

that's not too bad an explanation. Not a recipe per se, but I feel like it would explain dhansak enough for someone who hasn't eaten one to understand what they're getting.
