Hi Razor, I've cooked this tonight and having read the posts above will add some of my own comments when using CA's base (I'd made this the other day so didnt want to start a new one).

I made 3 portions of your mix:

- 1000ml CA's Base
- Chicken Tikka using mix (http://www.curry-recipes.co.uk/curry/index.php?topic=4844.0)
- ADDED: 6 tsp Sugar
- ADDED: 3 tsp Garam Masala
- ADDED: 400g Tin Tomatoes
- ADDED: 3 tbsp tom puree
- ADDED: 3 tsp Cayenne Pepper (may be controversial, but i find it gives it a nicer heat to mix the chilli and Cayenne)

Thanks for sharing your recipe, I will definitely come back to this one!

CA, made your base and spiced oil today then followed through with a Jalfrezi - Was lovely!

Have you ever attempted a Rogan Josh with this base at all?

Thanks TA,

Had a busy day today making 2 x base sauce, 1 x spiced oil and 1 x Jalfrezi as a test.

The Jalfrezi was lovely, a definite keeper there and I must say that as soon as I started cooking off the chicken with the veg with the spiced oil, I knew it was goanna be good!

Hoping to do some batch cooking soon with the other recipes that you have made.

Alter quantities if you wish but keep the proportions the same 10,8,6,4,2,1

10 tbsp Garlic Powder

8 tbsp Coriander
8 tbsp Rajah Tandoori Masala

6 tbsp Cumin
6 tbsp Garam Masala
6 tbsp Sweet Paprika
6 tbsp Mint leaves

4 tbsp Red or Orange Food Colouring
4 tbsp Sugar
4 tbsp Salt
4 tbsp Tumeric
4 tbsp Ginger

2 tbsp Fenugreek powder
2 tbsp Fenugreek Leaves
2 tbsp Chilli flakes (this keeps the kids happy, but feel free to double this with ease)

1 tbsp Cardamon powder

* The above mix creates 69 tbsp of dry mix.


As of Late, I've been using a halogen to cook the the chicken, with a light base of oil to the container

I use Wrights Liquid Smoke, yes it gives a flavoursome smokey flavor and when used in conservative quantity can give you a BBQ cooked flavour to your foods when cooking using non conventional methods such as grills or frying. You could add it to some form of atomiser to save time if you needed or you could even put some on your briquette bbq to burn off and flavour enhance your food. Great ingredient when making BBQ ribs in the oven to partially steam them.

Interestingly I have combined this DRY MIX 1:1 with Rajah Tandoori Masala (Spice Mix) and I have to say that the results are in my humble opinion Awesome!

I have as of late omitted the need for Natural yoghurt (although obviously it can still be used) and choose to literally sprinkle the dry rub and mix into the chicken along with a little fresh Coriander.

Removal of the natural yoghurt allows the powder to sink into the chicken a little better and prevents clumping/mess when frying off the chicken. And of course prevents the missus from saying that its too much hassle to cook a curry again because we dont have ingredient x.

I have also used this as a base and had great results for Chicken Rogan Josh using a straight through cooking method (without using any pre-cooked base sauce as I have done in the past). Again, aimed at cooking something for the Kids and following through with something for the missus and I

Djs Tikka Blend

Kids are always pestering me to make chicken Tikka, I use I for sandwiches, BBQ, salads, pita, almost anything to be honest. Due to time commitments however I have created the above blend for those who need a quick fix.

This recipe was inspired by many on this forum and continued search for good flavour. However I always seem to find myself missing ingredients such as the pataks pastes or specific blends from wholesalers etc so wanted a basic ?EASY? blend that did it all using the core ingredients with no pastes.

I have tried using sweet mint sauce and the results were good, hence in this dry mix recipe I have used sugar and a generous quantity of dried mint leaves. 

10 tbsp Garlic Powder

8 tbsp Coriander

6 tbsp Cumin
6 tbsp Garam Masala
6 tbsp Sweet Paprika
6 tbsp Mint leaves

4 tbsp Red or Orange Food Colouring
4 tbsp Sugar
4 tbsp Salt
4 tbsp Tumeric
4 tbsp Ginger

2 tbsp Fenugreek powder
2 tbsp Fenugreek Leaves
2 tbsp Chilli flakes (this keeps the kids happy, but feel free to double this with ease)

1 tbsp Cardamon powder

* The above mix creates 69 tbsp of dry mix.

1. Mix Ingredients to create your dry spice mix, factor down if you wish to make less
2. Add 4-5 tbsp of mix to 250ml Natural Yoghurt to a mixing bowl
3. Add to 400-500g of chicken chopped chicken breast (4-5 breasts) and marinade for 2-12 hours
4. Cook using your favourite method for Tikka/Tandoori i.e in oven, lightly fry, BBQ, or preferably under a hot grill on top of tin foil
5. If you have some, lightly brush with LIQUID SMOKE
6. Garnish with fresh coriander and lemon wedges
7. You can go on to use this pre-cooked chicken in your curries
