Hi TT,

It was Julian's vindaloo which called for Kashmiri chillies.  I made this a couple of days ago for the first time and it was delicious!  I managed to source a bag of dried Kashmiri chillies from Paks grocery store, which doesn't help you as they are a Midlands chain.

Julian's recipe calls for them to infuse in the oil for a couple of mins before putting any other ingredients in.  The taste of the chillies is not particularly hot but very deep in chilli flavour and it certainly turns the oil a reddish colour which looks great. I suppose you could source a red chilli which is similar in heat/flavour and try that.  I can only describe the Kashmiri as 'fruity' rather than hot.  I'm not sure how much difference these chillies make as have only made this recipe once.  I agree with you, buy online, I have seen them on ebay and on the spices of india website.

Many thanks to all for such a warm welcome to the forum.  UB, right on sister! although I am loathe to comment on the girth circumference re the majority of the forum!!!

Colin & CH, you are spot on, I have had a request to make another curry tomorrow for the boys.  Mmmm, I spot a handy bribery tool here, curry for housework is a fair swap I reckon!

Thanks Natterjak, I was curious as on Julian's website, the 'about me' section doesn't mention his name which I would have thought was fairly basic stuff. I only found out his first name through this forum, before that he was the random bloke from Chorley on You Tube with the chef's spoon!

I have spent a great deal of time reading through the recipes and advice and I am going to attempt CH's Phall tomorrow as he mentions flavour as well as heat.  We have had Phall a couple of times before and yes, it was hot but lacked any underlying depth of flavour.  Also CH's recipe is very clear and structured which is mightily helpful.

Hi all, I'm new to this forum and also to cooking BIR.  I have been making curry for years (wrongly, clearly!) without making a base first.  Anyway, I came across this forum accidentally whilst looking for a new recipe so went of to my local PAKS (Indian grocery chain) and today was my first proper go.

It was MAGNIFICENT!! I made a Lamb Tikka Vindaloo.  I was up early this morning making my base, I went with Julian's after seeing his video and also used his Vindaloo recipe.  Does anyone know his last name?  I used 976 Bar's Lamb Tikka mix which was absolutely gorgeous. I also pre cooked new potatoes in a little tumeric and mix powder and added them just after the lamb. 

I made loads of base so am going to freeze the rest.  I also made a load of Lamb Tikka and Vindaloo in the hope it would last a couple of days but my two teenage boys offered to kindly 'taste test' for me.  Their verdict was 'swear down mum, this is proper sick' which loosely translates as 'thank you kindly mother for the wonderful curry, it was exceptionally tasty'

Thank you all for your recipes and wisdom.  I need a week off work (at least) to try some more recipes as I am made up by my first attempt!
