Cheers Rob, that explains it all, with the vid too. Not sure it would work very easily with the thighs, as a bit big, so not easy to turn and toss around for searing.

Only asking, as I usually do chicken thighs straight in the oven and basically all that's left in the pan is fat. Which I don't think would make a great broth.
This is Lidl, I don't get to Aldi. Next time they have a Taste of Asia week I'll have a look, sometimes they have proper brand names, not just their own.
