Yes the Pan is very official it came from an Indian establishment. I was very friendly with him and he knew I wanted one and believe it or not he gave it to me as a birthday present.
It's solid steel and quite heavy it distributes heat perfectly and made to last a lifetime.
After I use it my Mrs puts it to one side for Me to wash separately she won't wash it with other dishes I'd go mad.
To be honest it's the contents that really count as long as your recipe is good you can use anything.
Oh well Tandoori oven next ha ha

If hes willing to give away such a great present maybe he would part with a few secrets?
You could always ask a leading question like " which is the best size for secret ingredient, 5 kg or 10 kg containers ;)
Great Pics btw.. infact all the pix recently uploaded have got me inspired to start experienting again,gg

Hi Layne, Pictures look really good! Chillies on the side of your plate - are they raw? I normally fry mine off at the beginning in spiced oil and leave them in the curry. It just takes the bite and rawness out of them. Well done to you!

Hi curryqueen
Yes the chillies are Raw old habits die hard I'm afraid.
I was introduced to eating them this way by an Indian who was a very good friend of mine I would often be treated to a meal when ever I was at his home and of course the chillies where a statuary extra I would say No thank's I cannot eat them they are to hot but in the end because of not wanting to seem ungrateful I actually started enjoying them so as they say when in Rome now I'm addicted to them.
If I ever go to an Indian restaurant I will politely ask if I may have 1 or 2 with my meal they usually just smile and probably think but your Not Indian only we eat them this way if only they knew I probably eat as much spicy food as them !
Regards
Layne ;)

Hi Layne, I eat them raw too but not in curry. Try them in a cheese sandwich sliced, it's a terrific combination! CQ

You just can't beat the taste of fresh chillies, they are a nice addition to salads as well.
