Title: tonights dinner
Post by: jamieb728 on September 07, 2012, 04:30 PM
Hi All

Had the day off so got an early start on dinner got the chicken tikka in the fridge marinating by half 8 then moved onto making the sauces one of my current favorites is a achari ghost i usually have lamb but didn't have any so it was chicken tikka which works well the recipe is a variation of chewy's i like to use pickled mango and pickled jalapeno peppers in mine gives it a nice meaty taste which is why i usually go with lamb, blades chicken gives a strong tikka flavour which works well. I also made a chicken tikka pathia and mushroom fried rice and fried off some poppadoms.

A lovely selection of curry porn Jamie.  They're two mighty fine looking curries there mate.  I must give both a go having tried neither of them yet ::).  I have been meaning to try the achari with some Mr Naga since i watched CT's vid.  The pathia has been on the radar for a while now.  All in good time as i seem to be on a madras mission at the moment and i've got to say the stuff is growing on me as well as raising a few questions ;D.  Trying to resist the urge to cook but i suppose i could always dial the magic number :)

Thanks for the comments. CH i have found a use for the tamarini i got for the NIS in the pathia to use for the sourness there is a recipe cant remember off my head whos it is that uses tamarind desolved with coconut that gave me the idea tamarina works well for me as missus doesn't  like the coconut tatse she sometimes gets when we eat out depending on the chef thats on.

There does seem to be a tendancy for some restaurants to include coconut in dishes when you wouldn't expect to find it.  I wouldn't expect to find it in pathia nor dhansak but the last couple of times i've dined out with a friend and tried their dish, coconut has been present in both :o  I can easily believe the Tamarina works well for adding a tasty savoury sour note to the dish.  It certainly works well in the North Indian Special.  Can't make my mind up whether i prefer the Tamarina or the East End Imli sauce though ::)

No time to try out new recipes tonight.  Decided to settle on what used to be my usual.  :o :o :o  HOT HOT HOT :'( :'( :'(.  Made chicken tikka phall tonight (no ordinary precooked chicken in the freezer :() and special fried rice.  Used the ingredients as per the Zaal Phall video except i added a tbs of chopped onions and 1 tsp of sugar.  No fresh coriander as i'd run out.  I'm obviously getting better at the art of frying the chilli powder well enough to cook it and get rid of the rawness/powder taste and cook it well enough to get the heat out of it and into the dish  ;D.  Think i'll be scaling the chilli quantity down the next time :o.  What's happening to me?  I blame this on too many madras's >:( >:(

No worries guys.  This thread contains a video of me making the phal under chef Az's watchful eye:

http://www.curry-recipes.co.uk/curry/index.php?topic=7714.170 (http://www.curry-recipes.co.uk/curry/index.php?topic=7714.170)

The ingredients are simplicity itself, although i now use a chef's spoon of veg oil rather than veg ghee and pre-cooked chicken.  Powder measurements are approx one rounded tsp of mix powder and two rounded dessertspoons of chilli.  In the video the garlic is probably about a dessertspoon and the Mr Naga two level tsps.
As for the special fried rice without mix powder, it's detailed here:

http://www.curry-recipes.co.uk/curry/index.php?topic=6070.0 (http://www.curry-recipes.co.uk/curry/index.php?topic=6070.0)

Any probs just PM me.  Good luck with the phall  ;D

Thanks Wickerman.  I used just under a level 3/4 of my chefs spoon which roughly equates to just over two rounded dessertspoons i guess.
