Right Guys Ive had a ganders through the site an cannot find a Lime Pickle recipe
Does anyone have a tried recipe PLEASE!
The last time I had some if i remember correctly it was very bitter and salty......
I'm on a quest - just bought 5 kilos of limes for 50 baht just over a quid - they are small just right for pickle.

Hi Rich,
I found a website that does traditional Indian recipes and provides free e-books for whoever wants them, and there is about 15 books in all.
If you join there website you can download all for free...

In particular one of the books which concentrates on pickles and chutney's has a recipe for hot lime pickle. I have not had chance to try it yet, but you may want to give it a go, although the salt content is a bit alarming... :-\

I will be making lime pickle - with not as much salt in and a will knock up a sweet pickle too
Now limes are in season here I'm tempted to go back to the market and get another 5 kilos wont be long before they are expensive again.

I would be inclined to stick to the recipe the first time, Rich : in my experience, it is always best to stick to the spec. when making something for the first time, and then adjust later batches in the light of experience.

Phil your a wise man - will do - then deviate a little - the limes are so cheap at the moment gives me chance to play
