Does anyone have a good BIR chicken naga recipe please? I've tried adding a couple of spoons of Mr Naga to a plain chicken curry but there was something missing. Chicken naga, when I've ordered it from takeaways has been a delicious very hot dish with green peppers and green chillis and a distinctive naga flavour.
-
My local does naga chicken, i love it!, to me theirs is just a hot madras and yes they use lots of Mr naga, it is a tasty chilli without doubt, to most of my cooking I add naga even in my beans on toast.

would love to know more about naga dishes myself.
the Mr Naga has not really done it for me. it's a tad more hassle but well worth making it yourself (chewytikka inspired link http://www.curry-recipes.co.uk/curry/index.php?topic=6005.msg60013#msg60013 (http://www.curry-recipes.co.uk/curry/index.php?topic=6005.msg60013#msg60013))

Thanks Jerry but I really have zero interest in making my own naga paste :)
-
For me, the hotter the dish the more it overpowers the other flavours of the dish.
I sometimes combat this by crumbling a little knorr chicken stock cube in the final curry. Maybe not BIR inspired, but certainly brings back some flavour to the dish rather than just heat.
-
Great question though Nutterjack,
I know just what you mean-I love a Chicken Naga from my local BIR-Its the only curry I order now, as thanks to this site, I feel I make superior 'Standard' curries than they do.
Does anyone know where you can buy fresh nagas from?

Hi NJ
Chicken Naga can be made any which way, Chef, Restaurant, Region, but it really comes down to the product Mr. Naga pickle,
which arrived around here about Twenty years ago.
On any menu these days, you'll probably find 3 or 4 dishes which have Mr.Naga as an additive,
nobody will use fresh Green Naga as I'ts far too fierce and dangerous for customers - unless they use it in a gimmick/joke curry like a Curry Hell/Bombay Blaster etc...
To match your local, make a Bhuna style curry with plenty of spicing and add the Mr. Naga halfway through a 10min cook,
reducing down at least 3 lots of curry base to create the Bhuna.
My Achari video is an example of the technique. https://vimeo.com/24117518
I'll be cooking this later, as Friday night is curry night ;D
Comfort food for all this miserable weather :'( issing down and even the Fog Horn droning on and on and on >:(

Do post us some pics CT. I'm trying to decide whether to venture to the pub or have an NIS delivered ???. Busy week and too tired to cook tonight ::)

Thanks CT I will definately try this, perhaps as soon as tomorrow. I've been cooking 976Bar's Bhuna recently which is lovely so will try it with some Mr Naga added. What would you reckon, couple of teaspoons?
-
Hi Nj
If your just going for the Naga flavour, 1 tsp would be enough in a single portion curry,
especially if you have chilli pdr and fresh green chillis in as well, depends how hot you like it.
But you will get the full on flavour, with 1 tsp.

Thanks for posting. Very nice looking supper there CT. May give your achari dish a go tonight. I'll pass on the okra though ::)

would love to know more about naga dishes myself.
the Mr Naga has not really done it for me.
I'm a huge fan of Mr Naga and experience cold turkey-like withdrawal symptoms if I can't get my fix, but when it comes to naga taste and strength, Mr Vikki's wins hands down for me...
Well worth a punt:

is there anyother way of viewing the video if you've not got quicktime (and don't want to download).
Salvador Dhali,
i'll keep eye out for the brand. it's an important item to me "nagga" (piece of the jigsaw).
the making of nagga sauce is dangerous and rubber gloves and eye protectors are not to be laughed at (if you give them respect you don't need of course). as Chewytikka say's you do not want to use pieces of the chilli in the curry either (too hot).
for a long time i'd never been able to produce lip burn at home (true test of vindaloo strength for me). also by taking the seeds out the curry does not have any hard bits.
it's easy to decide on which approach suits you're own needs - as a starting point just try tasting a spoon tip out of the Mr Nagga jar (mine says Hot Pepper Pickle Very Hot)
the key thing is many thanks to Chewytikka for once again posting which e already know will be an invaluable video (will have to view on relatives machine).

I do indeed, Gary, and it is definitely time I went there again. But on my previous trips I have not succeeded in locating a supplier of MDH spices (Kasmiri mirch, degghi mirch), so I am still dependent on Tunbridge Wells for them. Do you know if any of the Gurkha shops in Ashford carry the MDH range ?

Cheers for that Gary. Certainly none of it round my neck of the woods although i can lay my hands on Mr Naga easily and features regularly in my phalls ;D. Although lately i've found myself cooking other dishes instead ??? How do you think this one compares to Mr Naga? You got yourself a bargain in Asda. I haven't tried that particular sauce. However, i do have bottles of Da Bom and Hotter Than Hell extracts in the fridge for emergencies ::). I'm sure there are a few BIR's where these do feature in the kitchen and are used for customers who like their phall exceptionally hot :o :o I think i was a victim of this the other week when i visited Rochester for the Dicken's fesival. Having eaten incendiary curries for over 25 years I can only put the intense heat down to an additive other than extrahot chilli powder or fresh chillis. In the end i had to have a doggy bag :-\. I put my inability to tolerate it down to too much beer but when i tried the remains the next evening, it was every bit as hot and after two mouthfull's my eyes were streaming :'( The buggers had done me good and proper >:(

i'd love to make this and can go on the quote but want to make it to spec.

As far as I can tell from poking about inside, the video is nothing more than this :
http://www.southtyneside.com/sizzler/Naga_Alu.mp4 (http://www.southtyneside.com/sizzler/Naga_Alu.mp4)
It certainly doesn't require Quicktime, which I refuse to install on principle.

I always have naga chicken from my local takeaway which is very good, to me it looks like jalfrezi with spinach ,potato with a little mix veg bhagi and the taste of mr naga.
-
Phil,
you're a star many thanks for the link - i could download and use media player.
that was the good news - the video is moving pic of the finished dish so you need to work off Chewytikka's original spec.
going to give it a go on next base which i'm aiming for soon.
