Title: Pre-Cooked Chicken

I've made 2kg of pre-cooked chicken today having marinated for 24 hours in the fridge.

6 tsp spice mix (see below)
3 tsp garlic puree
3 tsp ginger puree
2 tsp salt
1 tsp turmeric
1/2 tsp paprika
3 tbsp rapeseed oil
6 tbsp water

Chop up the chicken, mix with the above ingredients, I put in a freezer bag and seal then pop it in the fridge for 24 hours.

Pre-heat an oven to 180 C then place chicken on a baking tray and cook for 20 minutes.

Spice mix
8 parts ground coriander
7 parts turmeric
5 parts ground cumin
4 parts curry powder (I use Rajah Madras mild)
2 parts fenugreek leaves (methi) finely rubbed
1 part garlic powder
1 part ginger powder
1 part onion powder

I used tbsp which makes a pot full which I also use for my curries.

This isn't fair! I haven't even had lunch yet and you're torturing me with that succulent trayful of chicken!

And I've got to ruin it by cooking it all in a Korma for the girlies for my grandson's 1st birthday party next week!! :(

Just waiting for it to cool sufficiently to bag up and throw in the freezer.

I've also got a 2kg bag of Chicken Tikka marinating in the fridge as well but I like to marinate that for 48 hours then throw on the BBQ for that wonderful smokey taste :)

I am shamed by my inaction. Your hard work in the kitchen has forced me to extract 4 bags of chicken breast from the freezer to defrost for tomorrow's (hitherto unplanned) marinating-fest!

I've had so much curry this week, I've ran out of pre-cooked chicken (although I DO have some king prawns!).  ::)

Well the 2 kg of Chicken Tikka has been marinating for 48 hours, so it was time to stick it all on the BBQ. All I have to do now next week for the party is make the Korma Sauce and the Garlic Chili Masala sauce :)

Well I had the party yesterday and ended up making.....

20 portions of Garlic Chilli Chicken
10 portions of Chicken Korma
10 portions of Chicken Tikka Masala
15 portions of Brinjal Aloo Bhaji, used CH's Brinjal Bhaji recipe and added potatoes
large batch of both Pilao rice & Plain Boiled rice
Naan Breads
Onion Bhajis
Coronation Chicken
variety of dips and sauces
Bombay mix

It was a heroic effort, 976bar - I admire your stamina!

The family came over last night and I made a couple of starters, salad, dips, 3 different curries and pilau race. It took me most of the day and I was totally knackered!

Well done to you - your stuff looks great!

It was like being in the mess tent when I was in the army, everyone formed an orderly queue with plate, knife & fork in hand and the first lot came back for seconds  ;D ;D

I thought it would be really difficult trying to guess the right amount of spices etc to be used for cooking bulk, but as I posted on the forum earlier in the week, same amount of G&G, base sauce, fresh produce, pepper's garlic etc as a single portion but only two thirds of the amount of spices when cooking bulk. Oh I could have cut back on the fresh chillies in the garlic chili chicken a bit as it did make a few eyes water and numb lips  ;D ;D

But apart from that it turned out quite well really, so I was quite relieved when everyone enjoyed it :)

Is this still your preferred method for pre-cooking chicken?  Just wondering about the differences/results between boiling the chicken and cooking in oven.

Do you put what is left of the marinade in with the chicken to cook?

Looks delicious; thinking about doing a batch myself.
