Hi All
Came up with this simple idea, where I go in to a busy BIR Kitchen,
order my supper, and video the team cooking it.
This first effort, although spontaneous and a bit ropey, cut together fine.
Was going to order my 'Old School' all time BIR meal combo,
Onion Bhaji, Chicken or Beef Madras, Peas and Onion Pilau, Tarka Dhal and a Naan.
But they were just finishing off a big pan of service Dhal as I walked in.
So I plumbed for a Chicken Dhansak, Veg Pilau, Onion Bhaji and Naan.
Very good it was too...

Chewytikka - so lucky. the place looks top notch and to let you have such access - fantastic.
never tried dansak before but certainly getting tempted.
loved the production and many thanks for making the effort.
we certainly still have lots to learn.
ps the spice frying part was quite timely - will try lowering the flame myself at the weekend.

Great stuff CT. There's nothing better than a video taken behind the scenes showing the experts at work. Thanks to those guys who are able to get access to kitchens and are sharing this with the forum. 8)

Love this video! I have some questions though...
- In the dhansak, what's the very first ingredient (after oil) to hit the pan? Looked like either chopped garlic or onion
- chef very clearly says the dish is called "chow dhansak", is this different from his normal dhansak? At 5:45 he seems to say "chow is special" so maybe this is a special dhansak?
- do you know what is in the dhansak powder added around 5 mins 42 (after the dhal)?
- is the service dhal just red lentils boiled in water or are more ingredients involved?
I was surprised to see no salt added but maybe the worcester sauce and tamarina add enough, or perhaps it features in the "dhansak powder"? As you probably realise the reason for all the questions is I'm keen to try this recipe myself! ;D

should be interesting to compare, as it will involve a lot of different Chefs and Cooks.

Just a normal Tarka to start = Oil + G&G + Tom/Puree dilute, + Mix Powder and usually Chilli Powder.
It is just his normal Dhansak, "Chow" is my Nickname and it's just his banter.
He's a good mate and you might also here me telling him to "hurry up". ;D
The Dhansak powder is his own spice mix he blends and his "secret". (which probably helped him become NE Region Curry Chef 2012)
The usual service Dhal is started off with Oil, Salt, G&G, Haldi, Tej Patta, Cassia, Masoor and water.
I've never taken note of the exact recipe, but I'll ask the young cook, the next time I'm in.
All good curry fun... ;D

Thanks chewy. I'll give it a try sometime soon - have been after a decent dhansak recipe for ages. I'll omit the pineapple chunks though, there seem to be 2 schools of thought on dhansak and I've always preferred the ones without pineapple.

I tried the chicken dhansak last night, as shown within CT's youtube video. I had high expectations because the chef's approach looked good and I hoped the Maggi Tararind sauce might be the 'special ingredient' I needed to lift my dhansak trials to a level beyond where I was before.
I'm sorry to say that the result was disappointing to say the least. I would guess that the Maggi sauce is to blame and I'm unlikely to use it again. The resultant sauce reminded me of a dhansak from one local BIR takeaway - one of the worst I've ever had. That Maggi sauce is only 15% tamarind, for a start.
I can't possibly say that the chef's dhansak is rubbish. It wasn't a recipe as such and the video requires a certain level of guesswork, so perhaps I got it wrong.

Have such a long curry to do list.... finally getting round to trying all these recipes!
Anyway... made this Dhansak with the help of the video, using Zaal base, Abul's 8 spice and Rajah garam-masala in place of the chef's custom Dhansak mix. The Dhal I used was just a made up simple blend of some browned sliced garlic, onions, whole spices, little mix powder, butter ghee, tumeric and Natco spilt red lentils - actually very delicious just on its own!
Top Dhansak recipe. No need to look any further for me anyway! - have made this several times now, and with a good heat and rhythm on the stove its so far always turned out a really great Dhansak curry. Again - thank you for posting the video.

I think CT's vids and recipes are the dogs whatsits. He puts his recipes where his mouth is ;)
