Title: Achari ghost recipe

Hi all

Has anyone a recipe for achari ghost i no its got jalapeno peppers it says pickled spices not sure what this would be and it had fresh tomato, if anyone knows where i can find a recipe or has a recipe i would be very gratefull

Is there anything which could be substituted for amchur powder in this recipe?

I can get your recipe up unfortunatly the video wont work i was thinking about using pickled jalapenos i love them anyway straight from the jar.

One other thing i noticed while searching the web was that all the non BIR recipes used mustard oil i have only used it in my tikka has anyone tried cooking a main dish with it?

Hi Jamie
Most shop bought Indian Pickles are mustard oil based.
So you don't need any extra in a Restaurant Achari as it may overpower the dish.

If you do start a dish with Mustard oil instead of vegetable oil, make sure you heat
it until smoking and it looses it's colour or you'll end up with a bright yellow curry. :D

Dried Raw Mango (Amchur) is the souring agent in this dish, it just adds more acidity to the dish, you don't need to use it as you have the pickle, but I like it in my cooking.
If it was a South Indian dish you would use Tamarind as a alternative.

BTW I made a new Dhansak yesterday with a glug of Maggie Tamarina as an extra, with excellent results. ;) Love the stuff  ;D

Ingredients:

1 portion of precooked chicken
400 ml Taz curry base gravy

The one i had last night was a lamb dish very nice tender lamb aswell like i have said earlier it had fresh jalapeno peppers which im going to use pickled instead and between yours and chewy's recipe i will have a play and see what i can come up with.
