Title: Bulk re-heating frozen rice
Post by: wheresmyhead on April 18, 2012, 03:51 PM
I always use CA's excellent rice recipe from HERE  (http://www.curry-recipes.co.uk/curry/index.php?topic=1383.0) and freeze it in left over take away cartons to make a decent portion size. Normally to reheat it, I just stir-fry it in a pan with some ghee but soon I need to reheat more than I can fit in the pan.

Any tips? I was going to add a bit of water and put it in the oven but am worried it may dry out too much!

Cheers

Like you I freeze my cooked pilau in takeaway tubs (plastic 500ml ones) then to defrost and reheat just 3 mins in 800W microwave on full, rest for a min or so then a further 90secs. Perfect results.

Not sure how this would scale to bulk reheating, is how many portions you could microwave at once and how long the cooking time extends.

Yeah I used to microwave mine too, but I like the taste of a bit if ghee in the rice. Plus unfortunatley my micro won't scale up  to more than a few portions.

I think I'll experiment with some rice in a foil take-away container and see how it turns out  :)

I use an old ice cream container and microwave it. Just like the BIRs do.

Nice tip, I didn't know they did it like that.  I'll have to see if I can fit one in my micro with the amount of rice I need
