Hi,
My local Ambala takeaway make the most fantastic Bombay aloo. I telephoned asked the chief for the recipe and he said Jerra masala is used. I have tried but cannot find this anywhere, has anyone used this Jerra masala if so where can I buy.

Hi Gary
Just start the dish off by frying 1tsp of whole cumin seeds in the oil until they sizzle, add the onions, stir fry a minute.
Add G&G paste, stir fry - add a touch of Tomato Puree, Mixed powder, Chilli Powder, Salt and stir fry. (That's your Jeera Masala done).
Add 2 Chef's Spoons of Garabi to loosen it up.
Now add your parboiled potatoes and cook out on medium heat for a few minutes.
Keep adding a Chef's Spoon of Garabi and a touch more oil (Juggle), if you like it saucy.
Now add a couple of tomato wedges, sliced Green Chillis, cook out for another couple of minutes.
Garnish with chopped Coriander, a squirt of lemon dressing and a pinch of Chat Masala.
Probably better than your Take Away ;)

Chewy, do you mean ladles of garabi or chef's spoons? 3 ladles sounds like a lot for Bombay aloo

I'd ask him again and ask him to spell it, as I've never heard of that brand. That said, 'jeera' or 'zeera' is what cumin is called, so it may be a cumin based mix powder they use?
The only other thing I can think of that may have been lost in translation is Jalpur garam masala (http://www.jalpurmillersonline.com/proddetail.php?catid=150&prdid=5811 (http://www.jalpurmillersonline.com/proddetail.php?catid=150&prdid=5811)), but as said, best to double check next time you pop in to the takeaway.
Or take Chewy's advice - his will be even better!

MDH description and ingredients: Use Jal Jeera Masala with Gol-Guppa and Pani Puri. Also use it for enhancing the flavours of Dahi-Bhalla, Chat, Papri and Papads. Add salt or sugar to taste.
Ingredients: White Salt, Black Salt, Dry Mango, Tamarind, Cumin, Malic Acid, Mint Leaves, Black Pepper, Musk Melon, Dry Ginger, Caraway, Chilli, Cloves, Asafoetida.

I have never seen or heard of ,Jeera masala the only thing after asking at my local stores is ..... Cumin powder...
Jeera powder is Cumin powder.

just read chew,s recipe there i,ll have a go at that 1 later tonight sound a yumm side to the lamb madras i,ll be knocking up ( i pinched that to from 1 of his vids lol)
