Title: Ratan jot / ratanjot ?
Post by: Peripatetic Phil on February 05, 2012, 02:22 PM
Looking at some of Ajoy Joshi's recipes this afternoon, I noticed that in his recipe for Rogan Josh (Kashmiri style) he specifies 1/4 cup ratan jot infusion.  Now I have never encountered Ratan Jot before, but a web search revealed a couple of slightly disturbing facts : 1) It is used in soap making (http://jenorasoaps.blogspot.com/2010/10/ratanjot-alkanet.html). and 2) the seeds are markedly purgative. (http://nopr.niscair.res.in/bitstream/123456789/1587/1/IJTK%207%282%29%20269-272.pdf).  Neither of these is going to deter me from trying it, but I would be interested to know if others have used Ratan Jot, and if so, whether it added anything by way of flavour as opposed to colour.

Never heard of it Phil till now, But reading about it I don't think I'll be trying it any time soon ;)
Are you going to use Goat meat the same as Ajoy? or stick with lamb?

I just had a quick look at a few links Phil.
I couldnt see anything bad about it. Alkanet root has been used for centuries. I'm sure its all over my garden as one of the weeds  :D

Yes, that's where I first read of Ratan Jot, Unclefrank.  Definitely a new one on me, and I thought I knew my spices !

Isn't it  just a food colouring rather than a spice Phil?
