Hi all,
Anyone got a South Indian tomato (puree) rice recipe....??
I've been having it at my local restaurant and it's fantastic,all I know is there's curry leaves and cashew nuts and obviously tomatoes or tomato puree in the dish..
Please help and make my weekend. ;)

Hi Southstander,
I make a spicy rice for my son which he loves and uses, onion, garlic, chicken stock, some chopped up fresh chilli's or dried chilli flakes, a tbsp tomato puree, salt.
I am sure the rice you are talking about is probably a standard pilao rice with some extras added at the cooking stage.
Tomato puree added to the water,
Curry leaves and cashew nuts, probably added at the "Whole spice/Garam Masala" at the frying stage before adding the rice, then the water and tomato puree.
You could also add some fine slices of garlic and chillie's as welll to make it even more special if you wish.
Sometimes I even add sliced mushrooms too.
The possibilities are endless and it's just up to you, how much flair you want to put into the dish.

That's a bit of help and I will give it a go..
I'm really surprised there's not a tomato rice recipe on here as its a traditional South Indian dish according to my local restaurant...My restaurant also does a lemon rice which is much the same but obviously with lemon juice instead of tomato pur?e..
Hopefully someone will come along who has cooked this rice before.. :)
