Title: Curry Night for Lads

Hi Guys,

Wanted to pick your brains really. I recently had a curry night on my birthday for my mates, but spent most of the time cooking the bloody things so this time I want to have them made before hand. I have also heard this can make the flavours develop more.

Are there certain curries that are only recommended to be made fresh before eating and not a day before?

How do you go about reheating them?

Hi BMB,

When ever I do curry night, I get them ready either the night before or at the latest on the day.  I usually cook 4 TA size portions of each, Madras, Roghan Josh, Jal Frezi, Bhuna and Korma.  I have 5 casserole type pots which I put each type of curry in.  Then, just before I'm ready to serve, I give each pot a 5 minute ding, in the microwave.  Don't worry, it doesn't toughen up the chicken (if using) but it doeas get them piping hot.

Rice, cook for how ever many you want, and store in a plastic mixing bowl, with cling film covering the top.  Same again, prick the cling film and microwave for 5 mins.  MAKE SURE THE RICE IS STEAMING HOT....! You don't wont a dodgy stomach.

That's great thanks razor I was worried the microwave might over cook the chicken but a little zap should be fine.

I better get cooking lol

Thanks for the help guys it went down an absolute storm. I made a Korma, Ceylon, Vindaloo and Prawn Pathia, with continental naans and some popdoms. Was 8 of us and planned it just about right.

I must say CA's recipe's have not let me down and I have tried the majority of them now.

Any recommendations of whos to try next? The reason I went with CA so far is he has base and a number of recipes so I can eliminate the difference in base if something doesn't turn out well.

A read a lot about Darths base. Any recommendations much appreciated

Hi BMB,

great news on the curry night, did you try the microwave suggestion?

As for other recipes, CA's recipe are so complete from A-Z, it's going to be hard to point you in the direction of others but, as a suggestion you may want to have a look at Chewytikka's recipe.  He has a base gravy, along with a spice mix and plenty of recipes, all with the added bonus of videos.  I am currently using Chewy's gravy, even in place of my own and I can't get better at the moment.  I also use CA's recipes along with his gravy which is very easy to make and gives perfect results.

Julian from curry2go is also putting together a good collection of recipes as is Abdul Mohed.  There are also the Ashoka recipes kindly provided by panpot, so there's a bit to get you teeth into there.
