Well since my 1st curry post I have realised that cooking curry....? it is not the curry powder, this is an art form. I was na?ve, young and foolish.. It did make a bloody good curry mind.
I wish I could crack it I so want to make Indian curry?s at home. I woke up the other morning and thought I need to get a job in a restraunt work for free and learn.
I have tried the KD base now, and made an ok balti, not like a take away though. I?ve tried a korma a few times and it?s getting there.
Anyone live in Bristol and want to help teach me make good curry? I had a take away last night.... my god; it was so good in comparison. Does anyone want to post a recipe that shows from scratch, best base sauce they use and how to create curry from that base? Yes maybe lazy but trawling through this site? I?ve been on for ages, its difficult putting the best ideas into practice there all so good.
Im thinking Pete! Darth! Mark J Ray? Anyone want to create a really a nice document ;o)
Ray I was reading the post about the balti kitchen; I have yet to try the base but will do this weekend. I was thinking about adding about 100ml of oil at the beginning.
One thing I have noticed is that when I have made the base and I create the curry, I never seem to get any oil floating on the surface, any one else have these problems? Maybe I should add more oil?
Curry Kings and Queens, please do keep up the good work, this is one of the best sites I have ever come across, I have been pickled with paprika and need more and more chilli,,,, so help me god if this is the last thing I do,,,, I will create a curry with the taste at home!!!!

Try some of my recipes, the base within the recipes will make good Curries all the time (better than KD's imho),also check the links within them on cooking Chicken & making Dabari Rice,let me know how you got on & if you need to know anything about either recipe/thread just ask m8tey, you will also see pictures of the making of the base sauce in the Vindalloo & Madras recipes (the same one is used for the VindaMasala)? ;D

Cheers mate, got a long weekend ahead ie... no work! Going to have a shot at one of your base's tomorrow and cook it up on Monday... Do you think the flavour improves if I leave it for a couple of days?
Regarding the corriander, when you say stalks... might sound daft.... you use the wole thing leave and all?]

Hi Jimmyja,
About 100 mls will be fine, more if you are adventurous. The whole point being as the base cooks the oil can be skimmed off and used for the next curry. Some are not so keen on large volumes of oil on health grounds but it does seem to add an extra dimension to a dish.

Hi Jimmyja, i use the whole bunch but don't use the very end of the stalks that are dried up & tough (this is especially true if you buy you Coriander in a flower pot) you get it in supermarkets in a flower pot so you can keep it going for a few eeks & just cut of what you need, you will use it all so it ain't gonna grow no more,no more !
Don't use the very ends of the roots if you buy a potted Coriander plant etc..etc..

Also Jimmyja if you cook the base & then make one of the Curries it is best left over night, you smell it the next morning mmmmmmmmmmmmmm!!!!

No Im here to help,but i just cant get a simple answer out of any of you spice gods as what brand curry powder you use.If you that well up on your curries then just tell me.I wonder if you even want the spices free,after all you have to buy them somewhere I made you an offer seems you dont want to take it up,HUH After all it would have been a great bit of knowledge for those who seek the seceret but you hold it back from them.If you know how to make your BR curry then why do you inqire off me If there ys anyone on here that wants a restaurant curry powder with a gauratee of a refund if not genuine happy then dont hold it back with thev excuse of saying that Im looking for money,arnt you ?Or dont you like somone who comes here who knows the art of indian cooking,and take away the limelight from you.I can tell you that im not that person but help is here if needed.Dont let your friends of this site down.3 moderaters to email me well that a laugh 1 who says he cant get it right and claims to have the madras and vindaloo cracked Pete.

I think the problem Ifindforu, is that you haven't answered any of the questions that people have reasonably asked of you. It's difficult to believe that you know Indian restaurant cooking when you don't seem willing to share your knowledge. Infact your posts so far do seem to be solely aimed at attracting people to your commercial enterprises. That's not what this forum is about. People here share information freely, with the emphasis on the 'free' part. Perhaps you could redeem yourself by telling us what the brand name is of this curry powder that you mention that can only be purchased in 10kg tins please?

Sorry ifindforu I think thats the other way round, you have been asked by a number of members and refuse to answer!!
The way it looks is that you know some fabled brand of curry powder and by keeping the info to yourself you can sell us small quantities of it at a profit to yourself.? Correct me if im wrong? ::)

Terry, I don't think you've really read through many of the past posts on this forum.
We are nothing but a helpful friendly bunch with one common goal, we share as much information as possible about our experiences and experiments and certainly don't hold back.
Looking at your posts it seems that at every opportunity you promote sales on your site and that is your reason to be on this forum, my feeling is this activity is against the ethos of this forum.
In reference to 'spice god' these titles are purely in relation to the number of posts and in no way infer any superior cooking ability

Terry, I dont think youve ever asked me this question?
I tend to use bruce edwards spice mix with the curry powder component varying, commonly I tend to use rajah mild madras (I think its called) or rajah rogon josh masala
