The Madras 100% Clone (of my local BIR)

Now i remember the "in 2 curry" forum, a some of the old boys are still knocking about pete [haldi], graeme, Stew[admin], stewpot, markj, CC, CK, the list goes on.
in 2 curry went belly up and cr0 was born, i remember Pete emailing me about a his new base findings and thinking this is it!! curry heaven.. and the trials and spice mixes went back and forth [still does today]
however this recipe still sticks in my mind, one because he [Darth] posted with photos and two, once made.. made me among my mates a effing curry legend
now almost 30 000 views [and copied and pasted all around the web] it was born here at cr0 and this deserves a another looky because it really does make a really good madras... perhaps a little to much GM for my liking but the garlic and chill just does it for me.
My rally call is if you have the time is to cook this recipe and post your results and pic's and PM Darthphall to say thanks you never know the legend may even bless us with his presence again.
I'm gonna do it tuesday/wednesday... and get back.
All the best and to another 30 thousand views UB. :)

First base & curry I ever made off this site. I revisited it a few months back and it is still imo one of the best

I still make this recipe and have the base and final dish(enough to make 3 more batches with the base and around enough single servings for 8-9 curries) in my freezer as i type i love this recipe simple to do but with excellent results. I would advise people who have not tried this recipe to give it a go. Make this recipe to spec then you can alter to your own tastes it is a very good madras recipe also one pot and one pan used less washing up.
Cheers.

I am going to give this ago :-) i may have to do the base first
and break it down into stages :P

Hi Graeme it already is in stages http://www.curry-recipes.co.uk/curry/index.php?topic=674.0 (http://www.curry-recipes.co.uk/curry/index.php?topic=674.0)
What i do is make the batch of base, make one batch of the Madras Stage and freeze the rest of the base in half litre pots then freeze the rest of the Madras in single portions. You really should try this recipe, one thing to take into account is the frying stage i fry the onions first until starting to go translucent then add ginger and garlic, then fry until onions go a light brown colour (little dark brown bits on the edges of the onions) then add the spices, stir so the spices lose their rawness then add the rest of the chopped ingredients (onions, carrots, pepper and celery) give a little stir to coat the vegetables then add water.

Good to see your plan worked UB, DP is back!
I'll have to get my big pots out and give his recipe another airing, been ages since I did it so it could be good to go over old ground.
