Does anyone know how to make the Chilli Sauce they make on Donner Kebabs? I know its not exactly Curry Requests..but a sister somehow.
ALso how do they make the Red and White Cabbage they put on them too?

Sorry mate, I've never been sober enough to remember the next day exactly what it tastes like. I do remember it tastes worse coming up than going down though.? ?;D
ALso how do they make the Red and White Cabbage they put on them too?
It's a little known fact, but the common white cabbage is quite easily embarrassed. The wily farmers, learning of this and never being slow to seize a new marketing opportunity, formed the 'fmc' or farmer's mooning collective.
Basically at a given time in the white cabbage's growth cycle the fmc sneak up on the unsuspecting cabbages and collectively drop their trousers, subjecting the poor cabbages to an onslaught of rosy cheeked tomfoolery. The cabbages, as is their nature, immediately turn a lovely shade of red.
It then remains for the dear old farmers to reap the red and white cabbages, slice them finely, mix and voila, red and white cabbage dressing for your kebab.
Either that or the geezer in the kebab shop just buys a red cabbage and a white cabbage, slices them finely, mixes them and there you have it. DUHH!? ? ::)

My favorite kebab house buys in the chilli sauce, I always thought it was homemade but once saw one of them topping it up out of a big chilli sauce container.

So is that the same kind of Chili Sauce you can get at the supermarket made by Sharwoods?

No idea I didn't reconise the make but it was big and not the sort of thing you would get in your local super market. If I go back anytime soon I will ask them.

What i use is:
Ketchup for the base
chilli powder for the heat
water to thin it out so it runs all over the salad
I did ask some guy years ago that was serving me a kebab how he made the sauce, and he said tomato sauce,cayenne and pepper.
All i can say is experiment till you find what you like, then let us know!

Well, I have found out that some places buy it in Bulks from a Cash and Carry, I would LOVE to know what the brand name is of it though!. Different taste from what you would buy Chilli Sauce at your local ASda. Some places make their own, living in America now theres no way I can go into a Kebab Shop and ask (well find one untill they tell me).

I was in my favourite kebab outlet and saw them filling up the squeeze bottle from a large plastic container, I tried to snap the front but the picture didn't come out legible.
All I can say is that the label was oval, then next time I'm in I'll try again.

Yeahh anyone whos in a Kebeb shop next, ask them what the brand is of the chilli sauce they use and where they get it.
Cos that stuff is soooooooooooooo darn good!

When I lived in Wolverhampton, in Chapel Ash (Where there's loads of restaurants, take- aways, Chinese, kebab shops) There was and still is I believe a famous Turkish kebab take away with a couple of plastic tables and chairs for those too drunk to stand.
This kebab shop was always packed as the food was top quality and the chilli sauce was home made and fantastic. It sat there next to the salad in a very large shiny stainless steel bowl and it's main ingredients were tomatoes and chilli. It was pure heat, on the counter was a photo of the chilli champ, the person who could endure the most tablespoons of chilli on his donner.
Every week there was a new champ's photo.....I think it was 25 Tbls at the last count.....I once actually made this chilli sauce to perfection, looks consistency and taste but all I can remember about it was that it was done in a food processor (Not a blender, it wasm't a puree) it was made with oil, fresh toms and red chilli powder, but whether it was fried or not I'm not sure.............dammit........now I fancy some....... :P

I would try Rays idea the Sharwoods Chilli sauce, there are two that i can remember one sweet & one just savory both are very good i prefer the savory which is very similar to Donner Kebab sauce.

Thanks for that link! I have tried alot of them but they never came close to what the Donner Kebab Shops have? If I ever visit home again Im gonna go into a Kebab Shop and ask them 8)

hi guys
one drunken night in ashford kent went into ashford grill and kebab house whilst i was waiting i asked about the chilli sauce of course being a bit of a chilli-head :) he said they use tomato puree, chilli powder and water.just getting the quantities right you mix it all up in a small saucepan and simmer until ready you would probably need it to cool. i have tried it too much success just getting it to the right consistency and heat level you like. the bottled kind you guys are talking about is concentrated sauce and tastes lovely and hot but i have found that it is mainly found on the shelf at the old kebab van as opposed to the shops i have been into. the nearest to me is in headcorn (shop that is) it makes its own it very different to ashfords it has celery tiny pieces of pepper tomato juice or watered down puree and chilli powder but it is quite watery and not as hot .

Hmm thanks for that. I certianly am wondering now. Whenever I would have a kebab from anywhere up in Geordieland, I would always end up noticing that their Chilli Sauce had consistency, lumps of stuff? Whatever it/or they were I will never know?

It could well be that the chili sauce was more along the line of a salsa than a sauce if it had texture.

Yes you are right....I have tried on many occasions to recreate it....but unless you actually can ask the owner how he makes it, then we will never know.
