Just thought I'd pop in and say hello :) joined a little while ago and just been nosing round the site, seeing what's what. Have to say I've already learned a lot!
Just been diagnosed with coeliacs disease so as Indian food is gluten free, what better excuse do I need to cook it more often????!!!
I've got a couple of my own adapted recipes including a nice dhansak but as of yet I've never used a base gravy/sauce in my curries-I will be trying my first one this weekend so I'll post up how I get on.
Certainly looks like an awesome forum, and everybody seems nice and pleasant and not obsessed with starting arguments with each other, for once! I look forward to getting to know some of u a bit better in time.

Welcome to the forum Ben. Just shout if you have any questions that you can't find answers to. There are loads of very knowledgeable curry holics on here that will do their best to give you the right answers. Look forward to reading your post on the results of the weekend. Don't forget to post pics ;D.

Seriously, apart from wheat, what else do you have to avoid to maintain a healthy diet.
We may be able to help in your choices.

Hey thanks for the welcomes, chewy- it's just gluten I can't eat so basically anything with flour or wheat in it. Gram flour and corn flour are fine tho, hense Indian food being fine, altho I could murder someone for a decent gluten free recipe for naan/paratha/roti....

Mrs moony also has ceoliacs and a curry monster too boot.
For breads i make her something similiar to arabic bread in taste and compliments the currys lovely,it is very simply made with gluten free flour and will send you the recipe over the next couple of days.
Welcome to the forum, there is an abundance of like minded people like yourself too help.

Cooked curry queens patia on Saturday, using natco base. Turned out very well, lovely consistency, taste and spice level were really good, there were a few things that I learned with it like I precooked the chicken kris dhillon style and refridgerated over night, in hindsight i would have rather put it in the curry straight after precooking, as it was much more tender and juicy straight after. But on the whole very nice indeed, so a success :)
