Well Folks, as promised here is my side by side comparison of the 2 most highly acclaimed bases on CR0.
You can see the details of my making Chewy Tikkas 3 hr base on its own thread, and here is my making Cory Anders base.
I feel I should have thinned both down a tad(Before I get told!!)but both ended up the same consistency.
CA's Base.
1) The raw ingredients in the pot
2) CA's Spice Mix
3) After the simmer
4) After Blending
-
And here are pictures of CT's(Chewytikkas) and CA's(CoryAnders) Base side by side.
You will see that CA's base is a much lighter colour.
-
Now for this to be a proper test I had to also make a curry.Needless to say the wife stuck her oar in again, so a Korma it was.
I stuck to CA's Korma recipe, as shown in the photos below.
My conclusion, is that both bases taste in my opinion identicle, but Cory Anders was faster to prepare(Although was less quantity, so may be about the same with same amount of ingredients)
They are both fantastic bases, but for my own tastes, I would add a touch(maybe 0.5 tsp) of chilli powder to it, as even a korma has a little chilli spice in it.
I feel a proper conclusion can only really be made with a 'proper' curry, that I hope to prepare in the not to distant future.(Suggestions maybe???!!)
Hope you enjoy my reading experiment as much as I enjoyed making it.Many Thanks to CA & CT for providing the recipes.More to follow!!
Madmatt.
p.s. Bet you are all loving the apron!!!!
-
Good work Matt and the apron is genius. ;D I want one! ;D
Would have been interesting if Chewy had a Korma recipe (don't think he has posted one), then comparing that (with Chewy's base) to CA's. Both of them look lovely though.
Both CA and Chewy have Jalfrezi recipes - that might be a good comparison for you to move onto next.

Madmatt absolutely spot on, great effort and great pics.
This is one of the reasons why CRO has come on leaps and bounds over the past few months. With members like yourself doing the experiments and posting your findings, It really does help everyone who reads this forum.
Well done
Alan ;D

Nice work Matt, some new Blood is just what crO needed to put the spark back into the site ;)
-
Thanks guy's.
Hmm Ramirez, I do like a good Jalfrezi!! Will look into it.
Glad you all appreciate my efforts.
Regards
Matt

great job - well done! good clear pics and great looking pilau rice as well
-
Great stuff! Matt a non-biased fair comparison of the two bases. So following the test do you think that the use of whole onions and the longer cooking time in the CT base produced a better 'sweeter' tasting sauce then the CA base or not. And what sauce out of preference would you make next time and for what reasons. Sorry to harp on about this and the questions but I really want to get to the bottom of this - Just about to make a new batch up myself.
Bon jovi

nice work Matt and some good looking curries too! :)
-
Great post Matt and good to see a Korma getting some airplay as it is a much maligned curry. By the way your rice looks excellent too.

This is a question we all want to hear the answer to ;D. And in your opinion? ::).
Great job though Matt. You pitched two of the most acclaimed bases on the site against one another. It would be very interesting for you to make a dish like Razor's jalfrezi or his Rogan josh with each base to see if one or the other edges in to the lead :o.
Love the apron too. Looking at the cooker and the tiles you needed to wear it :D. Well done mate and thanks to the base creators for sharing their knowledge and recipes here and for their continued and much appreciated regular contributions. I will be carrying out a similar experiement with 4 bases in the running at the moment as soon as i have the time.
Great post. Keep up the good work.

No probs curryhell.you are right about the cooker etc! When simmering these bad boys do bubble and splatter a tad. Will put a lid on slightly ajar next time.
I made ca's jalfrezi since this and it was truly amazing.
Am away on hols at the mo but will do another comparison on my return.
Another reason for the state of the cooker is probably one ingredient I never mention but Is always there when I do a ruby Murray , and that's the bottle of wine!!
The method should read chop onions, take a sip, add cardamoms, take a sip etc!!lol
Have fin( by the way I'm cooking ca's jalfrezi and my korma recipe tonight for 9 people, and I'm CAMPING!! Should be fun
-
Great post. Love the apron too! Would really like to see a Jalfrezi comparison - one of my favourites ;D

Like everyone else on this thread, I'd certainly add a BIG 'Thank you' for doing the test. I'm still dithering between trying CA's or CT's or Taz's base. Best to go straight to action and try them out instead of putting it off!!
-
My pleasure Alarmist.
I have yet to try Taz's base, but will do soon.To be honest ive found CA's base so good, its hard to change(Along with his main dish recipes-not had a bad one yet!)
I still feel my pilau rice recipe, and Korma recipe is outstanding.Would love to hear peoples verdict(with pics if poss!!)
Also my base recipe is one to try if pushed for time, the finished currys are great, with a lot less effort than any other posted on here imo.
