After making dozens of Onion Bhaji's which were mostly crap I have at last produced not only edible Bhaji's but also some of the most tasty ones and all thanks' to criswg's Bhaji Recipe http://www.curry-recipes.co.uk/curry/index.php?topic=5057.0 (http://www.curry-recipes.co.uk/curry/index.php?topic=5057.0)
Other than being just a little too Salty these Bhaji's were very nice with the Aniseed flavour making all the difference after using Fennel Seeds for so long.
The other big discovery which has taken me until now to realise ::) is the reason why my Bhaji' mixture has always been too wet and this is down to leaving the sliced Onions for too long before cooking. The water contained in the Onions is released into the mixing bowl gradually and if left for an hour or so requires a lot more Gram Flour to 'mop up' all this water to be able to form a sticky enough mixture to form a Bhaji, this mixture becomes very 'cakelike' and very difficult to cook the Bhaji's through. This evening I sliced the Onions and immediately added the ingredients as per chriswg's recipe - then straight into the hot Oil ( 140 d ) for approx 10 mins - done. ;D

Congratulations on find your onion bahji nirvana emin-j. It's always good to add another one to the "done" list. Haven't tried this recipe yet but it did win the group test. Next time i make them i'll give the recipe a try and provide some feedback.

Thanks' mate ;) I found the Bhaji challenge far more difficult than the Curry/Base/ Bombay Aloo/Pilau Rice but now have completed the whole set ;D Right, what's the next challenge !
