Ok i know i don't use this forum much but i do look in to see whats going on. Anyway my mate is Bangladeshi and has is own Balti takeaway and has worked in Rusholme for 20 yrs. So i am going back to England in a week and i have arranged to work for him for 2 weeks, and he's promised to show me everything he can within reason given a 2 week window.Obviously the gravy, spice blends, cant promise to get the answers to everything but i will try and get as much info as possible. Bring on the Exotica Al, cheers guys

Hi Rozzi, sounds like a great experience is going to be had.
In light of Chris's test on CTM I would love to know his recipes for all of the components that make up his Chicken Tikka Masala i.e. Chicken Tikka Marinade, Masala Paste, the final Masala recipe, etc.
Also,the Keema and Peshwari filling recipes for Nan and the nan recipe itself.

2 weeks is a long time so you should be able to get quite a bit of detailed info. Personally, the exact details of the entire process of making a Madras would be brilliant - starting from the very beginning (base, spice mix) right up to the finished dish.
Any chance of pics or videos? That would be priceless! ;D

Madras and garlic chilli chicken - start to finish including base - chicken pakora also if possible
and their take on pilau rice

Yes, I second the last two replies : I can quite happily live on Chicken Madras, Pilau Rice & Sag Aloo (with an occasional Lamb Dhansak or Lamb Biryani for variation), so informed input on any or all of these would be most welcome.

For me one of the most important things to watch out for is the base gravy.See if you can see some made from start to finish and watch out for any strange ingredients,or indeed if he uses spiced oil or some sort of chicken stock in it.
Anyway have a great time sure everyone on the forum is extremely envious!!

Well, i think you have enough to be going on with for now Rozzi to occupy your 2 weeks, but if you can fit it in would love a good tasty chicken phall recipe. Of course like Stephen a naan bread recipe and also the mixture for Peshwari Naan would be gratefully appreciated. Whatever you report back, enjoy the experience :D

Oohhh, a chicken phal : those were the days. 30 minutes of combined ecstasy and agony, followed by three days listening to Johnny Cash singing "Ring of Fire" in my head ... Finally had to give them up after one too many, and switched to chicken bhuna to give my insides a chance to recover, then slowly built back up to chicken madras and the occasional vindaloo, but never again a phal. But I do miss them !

am sure you will have a real good time and very envious.
i regularly think of this question - sort of if you have say 5 questions what would they be.
consequently for me it would be what you feel we need to know that we've got wrong or not quite there on to date.

Is there a better Chicken Tikka recipe than blades? if so I would like to know what it is please, also, pre cooked meat and chicken, plus the base sauce..... any secrets? Chicken Tikka Masala would be good too :)

Do t you remember the Tikka test? We put Blades through its paces and it came out second both for taste and overall.

CTM is the next project so hopefully we'll have some feedback on those recipes soon.
