Title: base sauce

Hi curry lovers

Im new here and looking through all the info and recipes available im really impressed! I made my curry base last nite and it turned out really good, my question is how long will this keep for in the fridge in a tub? Im making curry either thursday or next sunday, will it be ok till then or shud i freeze it?

I'm not sure I'd risk it normally for that length. I usually freeze in plastic takeaway tubs and make single portions. I've kept Taz base in the fridge for about a week with no problems, but it does have a proportionally large amount of oil in it which I think helps it to last.

Ok thanks, it was the Taz base that i made but i will freeze it anyway till the day before i need it

I'm the last person whose advice you should take, because I routinely ignore sell by/use by dates and even by clear evidence of mould (other than on meat/fish !), but I have kept base sauce for up to a fortnight in the 'fridge and suffered no ill effects from so doing.
