Feeling hungry after today's trip to the local auction house and then the garden centre, I decided to have a bowl of beef pho for lunch. I would normally augment the dish at the table with chilli oil and soja sauce, but on this occasion I decided to try some tamarind paste as well. Unfortunately I had not closed the lid properly, and as I reached for it I knocked the jar over and it went all over the mat. Not wanting to waste it, I licked it off, and was amazed to discover how similar it is in flavour to HP Sauce. Now I have always know that HP contains tamarind, but had never realised how much it owes its distinctive flavour to the same. This suggests to me that, in extremis, needing but lacking tamarind, one could probably substitute HP sauce and get away with it. What do others think ?

This was Bart, probably from Waitrose but also carried by my local Indian convenience store.
