Hi Everyone
Having used the sites search function to look for Panch Phoron (http://www.theepicentre.com/Spices/panchphoron.html (http://www.theepicentre.com/Spices/panchphoron.html)) - I can see it is used here and there in some veg dishes and in Micks pre-cooked spuds (http://www.curry-recipes.co.uk/curry/index.php?topic=5537.msg54396#msg54396 (http://www.curry-recipes.co.uk/curry/index.php?topic=5537.msg54396#msg54396))
However is anyone here regularly using the stuff in other situations? - if so, in what, how and when?

I made some up for one of the recipes from Sanjit Kapoor Khazaana (sp ?), probably Mutton Biryani, but the end result was nothing special. I used some of what remained for pre-cooking the Exquisa potatoes for Aloo Sag, and there it definitely works well.

I use Natco Panch Phoran and use it regularly, i'll have to double check it tonight, but i'm fairly sure the fennel is actually aniseed.
Anyway, you can use it in any dish but I tend to use it mostly with pre-cook potato and veg dishes like Mushroom Bhaji, Sag Aloo, etc., but it also works great with rice.

About how much would you add to the rice? 1/2 tsp?

For a single portion of rice, anywhere up to 1 teaspoon. I suppose it depends on what I am doing with the rice. I'd add less of it to a special fried rice that has mix powder added but more to a pilau.
I'll be honest though, I usually just pinch an amount using thumb to three fingers. So it maybe slightly more than a teaspoon, i'll try and measure this when I get home tonight.

I have panch phoran in my spice box but I've only ever used it in traditional recipes - nice with lamb. I can see how it would be tasty in veg or rice dishes too.

Just checked my Panch Phoran and and it's definitely Fennel seed though very small. I also checked my pinch measure and it's about 5ml.

Oh to be slim like you. That last time I tried an abdominal pinch measure it was more like two inches :( :( :(

Alas, if I were to pinch that measurement i'm afraid it might be more practicable for me to talk in fractions of feet not inches! ::)
